醬汁材料:日本生抽兩湯匙、味醂兩湯匙、清酒三湯匙、老抽少許

1. 新鮮雞髀起骨後,以少許鹽醃最少半小時
2. 在雞肉上鎅上淺刀紋目的是使雞扒平整
