話說細細個嘅時候成日跟家人去廣州探親,當時嘅廣州仲有啲地方係舊區,夜晚街道黑媽媽的,喺舊街嘅盡頭有一間唔起眼嘅雲吞麵店,雲吞麵非常非常好食,細細個嘅我好似一個人食到一碗淨雲吞同埋一碗雲吞麵。雲吞細細粒,一粒一啖好好味!不過最好味既係雲吞麵嘅湯底,超鮮味,無添加!
既然賦閑在家,有時間就熬製一個靚湯底,加上簡簡單單自家製嘅雲吞麵,幸福感在於美味嘅湯底!

雲吞餡料調味:鹽三份一茶匙、生抽少許、糖少許
其他:蝦子麵2個
湯底材料:雞殼一個、西施骨$40左右、大地魚一條、蝦米兩湯匙

1. 大地魚用廚房紙略為抹乾淨,以明火燒香後剪去焦黑部份,切片備用

3. 注入2公升水煲滾後,加入湯底材料,大火煮滾,以中小火煮兩小時後調味(我會加少少冰糖同埋鹽),隔渣後即成湯底
