去長洲最鍾意就係幫襯一間甜品店食芒果糯米糍,皮薄餡又靚!自從疫情之後就冇去長洲啦,今日突然間想食,不如就自己整啦!之前去長洲食糯米糍嘅時候,八八掛掛問過老闆要點樣整,之前都整過幾次,但係就覺得粉味太重,今次自己再做,調整一下份量,粉味唔重之餘仲好煙韌,非常好吃!用三個芒果,可以整到六大個!抵食抵食!

材料(6大個份量):糯米粉200g、鷹粟粉20g、砂糖60 g、椰漿300 g、菜油20g、大芒果6個
熟糯米粉材料:糯米粉50 g

步驟
1. 椰漿放入小鍋中加熱至微暖後加入砂糖拌勻直至溶化(注意⚠️不要加熱至冒煙)

2. 把椰漿加入糯米粉及粟粉中拌勻後注入菜油
3. 把粉漿過篩,放入以塗油的容器中蒸15分鐘

4. 取出後用筷子攪拌4-5分鐘至光滑,待涼後放雪櫃備用

5. 把50g的糯米粉放在鍋中煮熱,即成熟糯米粉

6. 把芒果切開(一開二)共6件
7.在雪櫃取出粉團,分成6份,每份大約75 g,把粉團盡量壓扁

8.將芒果肉放在入面再包起(如果粉團比較黏手的話,先把手放在熟糯米粉中再搓粉團)

9. 在表面灑上適量熟糯米粉即可,放在雪櫃內雪凍一至兩小時再食仲好味
