<p>昨天去酒店食buffet嘅時候飲咗鮑魚燉湯，佢哋嘅鮑魚燉湯加咗花膠，鮮甜好飲。返到屋企之後發現有一舊無激素嘅黑毛豬梅頭肉未用，冰格嗰度又有鮑魚同埋海參嘅存貨，咁就同羊肚菌一齊整個燉湯啦！今次喺超級市場買嚟椰青水，簡單方便<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60e.png" alt="😎" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>以前聽到朋友講話夜晚慶祝生日嘅時候屋企人會煮鮑魚雞煲，都會覺得好羨慕！屋企居然有鮑魚食！正！</p>



<p>去得街市多，就會知道鮑魚有唔同嘅種類：南非鮑魚、翡翠鮑魚、同埋最常見嘅大連鮑魚。</p>



<p>昨天在街市買來6頭的大連鮑魚，本身唔打算買鮑魚既我，去到街市見到老闆娘取出嘅六頭鮑魚，又忍唔住買咗<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" />再買來一邊新鮮三黃雞，做一個秘製沙薑鮑魚煲，自己做嘅鮑魚煲比出邊好食、比出邊新鮮，當然仲比出邊平啦！</p>

<p>冬天要進補一下，海參花膠既可以補骨膠原又有益，無論係小朋友或者老人家都非常啱食！今日喺街市買到新鮮嘅日本花菇，花菇有我手板咁大，半隻用嚟燉湯半隻用嚟炒，小朋友都好鍾意！加上新鮮花菇味道非常清香，用燉既方法來煮，營養得以保存，加上唔使睇火！好懶好懶就有好味嘅湯飲啦！</p>

<p>步驟：</p>



<p>1. 鮑魚起肉洗乾淨放熱水煮1分鐘，取出再洗乾淨備用。</p>



<p>2. 大花菇洗乾淨後去除冬菇碇，切件備用</p>



<p>3. 瘦肉切4方粒，以跑活水的方法處理後洗淨，瑤柱略沖洗</p>

<p>鮑魚是宴客用既菜式之一，由細到大都喜歡出街試菜，尤其喜歡海鮮嘅菜式。無論係大排檔、中式餐館、酒店中菜廳……都是時菜的地方。鮑魚也是經常試菜的菜式之一，其獨特的味道無論用來蒸、炆、炸都同樣美味。</p>



<p>其實喺家中做鮑魚嘅菜式都唔係好複雜，只需要處理得當，味道同出邊大排檔或者酒店也可以媲美。</p>



<p>今日做呢個鮑魚菜式，係小時候喺大排檔試過嘅酥炸鮑魚。鍾意外邊脆卜卜嘅口感入面卻鮮味無比，加上製作簡單，大家快啲試吓整啦。</p>

<p>早幾天去西貢的時候，買了手板般大的南非鮑魚，用了爸爸教授的方法去煮，雖然用上的時間較長（因為沒有使用壓力煲），但味道卻是原汁原味，鮮雞的香味滲入了鮑魚，加了金華火腿的醬汁，味道帶鮮，宴客的時候一人一隻也非常得體。最近在街市似乎也能購買到這款大南非鮑魚，週末的時候大家可以去碰碰運氣，煮餐好餸比家人食。</p>

<p>材料：大南非鮑魚一斤（大約6隻）、雞殼一隻（斬件）、雞腳10隻、瘦肉6兩、金華火腿一小塊、薑片四片、紅蔥頭四粒（切半）、蒜頭三粒（拍扁）、蔥段適量（分開蔥白和青蔥）、冬菇8隻（原隻浸軟）</p>

<p>調味料：花雕紹興酒一湯匙、冰糖1小粒、蠔油兩湯匙、生抽1湯匙、水400ml、生粉水少許、老抽1茶匙</p>



<p>步驟：</p>



<p>1. 雞殼、雞腳及瘦肉以跑活水的方法處理後洗乾淨備用</p>

<p>2. 南非鮑魚放入熱水中，灼大約半分鐘，取出鮑魚肉，去掉鮑魚嘴等內臟，鮑魚殼也留起備用</p>

<p>3. 在鍋中加入少許油，爆香香草材料（薑片、蒜頭、乾蔥頭、蔥白）後，加入雞殼、雞腳、冬菇及瘦肉略爆</p>

<p>4. 注入一湯匙的花雕酒，蓋上蓋子約20秒</p>



<p>5. 加入其他調味料（生粉水除外），先煮20分鐘。</p>



<p>6. 加入鮑魚、鮑魚殼及青蔥段在鍋中（盡量把鮑魚放在肉類下面），以小火炆煮2小時，熄火再焗兩小時</p>

<p>7. 把所有肉類除去、盛起鮑魚及鮑魚殼，上湯隔去所有雜質，取三份一的汁煮滾後加入少許金華火腿，再加入生粉水煮杰</p>



<p>8. 西蘭花洗乾淨後煮熟</p>

<p>9. 在碟中放上兩隻鮑魚殼，置入兩隻鮑魚，在旁邊加入兩隻冬菇及西蘭花，放上煮好了的汁即可</p>

<p>家中有咗日本米之後，小朋友日日都話要食日本餐。兩個好難服侍嘅小朋友話要用日本醬油嚟整鮑魚（細細個就咁識食），在街市買來新鮮的南非鮑魚，細細隻但肉很厚，就用來製作一道日本清酒醬油慢煮鮑魚吧！</p>



<p>看上去很美味的鮑魚，用了最多時間是在清洗鮑魚上，至於煮呢，則用上慢火慢慢煮就好。沒有太多技巧可言！在家也能吃到日本餐廳美味的鮑魚味道。</p>

<p>加入100 mL清酒炒混，煮一會兒等待清酒蒸發至一半份量</p>

<p>最近在油脂分離鍋的群組中看到有朋友煮了這個鮑魚雞飯，沒有詳細看要如何煮，就自己亂咁來。今天晚上試煮了，老公說用油脂分離鍋煮出來的飯非常美味，帶有淡淡的雞湯及鮑魚香味。加上一鍋就搞掂，可以好懶，宴客也很大體啊！放工晚了回家也可以試煮一下啦！</p>

<p>材料：新鮮雞半隻、鮑魚八隻、冬菇8至10隻（浸軟切開）、蔥段適量、白米三杯、雞湯三杯</p>



<p>雞肉醃料：生抽一湯匙、糖少許、魚露半茶匙、老抽少許、麻油少許</p>

<p>新鮮雞斬件後以少許鹽醃15至20分鐘，加入雞肉醃料、蔥段及冬菇再醃15至20分鐘</p>

<p>4.在鍋中加入已經洗乾淨的白米，及同等份量的雞湯，蓋上蓋子加熱直至鍋邊冒煙</p>

<p>5.打開鍋蓋，放入雞件再熱至冒煙，以小火煮5分鐘，時間到了打開鍋蓋，加入鮑魚再煮6分鐘即可</p>
