唔知道大家對buttermilk是否有認識?喺外國炸雞嘅食譜入邊,好多時候都會用到buttermilk去醃雞,buttermilk嘅味道就好似酸奶咁,可以令到雞肉嘅肉質保持鮮嫩多汁,上星期途經cc super,見到有特價嘅buttermilk賣,馬上買來一支,夜晚就用來做炸雞翼!
雞翼嘅醃料加咗黃咖喱粉、香茅同埋班蘭葉等等,帶有淡淡的黃咖喱味,小朋友最愛!
買唔到buttermilk的話,可以使用鮮奶,加入少許檸檬汁,放室溫15分鐘也可!

雞翼醃料:鹽1/3茶匙、buttermilk 250 ml、黃咖喱粉一茶匙、紅椒粉1/3茶匙、黃姜粉1/4茶匙、香茅兩支(切片)、班蘭葉1塊(切段)、蒜頭三粒(拍扁)
炸粉材料:雞蛋兩隻、麵包糠適量

1. 雞翼先解凍,抹乾後以雞翼醃料(buttermilk 及香草除外)醃1小時
2. 加入buttermilk及香草,放入雪櫃再醃最少3小時

6. 取出後隔去多餘的油份,在上面灑上少許紅椒粉即可
