泰國嘅紅咖喱好多人都鍾意食!好似交通燈咁樣嘅咖喱紅綠黃三隻色,大家又知唔知道咖喱嘅材料係啲乜嘢呢?無論係紅咖喱、綠咖喱定係青咖喱,其實都係用上咗好多唔同嘅香料。香茅、芫荽、蔥頭、蒜頭、蝦醬、孜然……小小嘅咖喱醬已經包含咗好多香料喺入邊,所以味道零舍唔同。
當然大家可以買現成嘅紅咖喱,但係香草隨着日子嘅流逝香味亦都會減少,要品嚐到最香嘅咖喱,當然係即整即煮啦!早前去Bangkok旅行嘅時候, join咗blue Elephant嘅烹飪班,比佢哋啟發咗整一款簡易嘅咖喱醬,比起之前嘅咖喱醬方便好多,其實只要多一個步驟,整咖喱醬30分鐘內就搞掂啦!今次配上咗原隻鴨起出嚟嘅新鮮鴨胸,味道更鮮味!快啲睇吓食譜啦!

咖喱材料:鴨胸一件、糖水荔枝四至五粒、菠蘿適量、椰糖½茶匙、魚露適量、椰汁600毫升
香草材料:南薑兩片、香茅三支(切片)、芫荽根四至五根、檸檬葉兩至三片、金不換少許、芫荽少許

1. 咖喱醬材料中的乾辣椒放在滾水中浸軟,然後放進熱水中煲1至2分鐘,放涼後去籽,切碎備用
