還記得第一次食西班牙紅蝦意粉是在ritz Carlton 的一所餐廳,當時食完後一試難忘,覺得非常美味,於是一直都想自己整!今日係情人節,當然要整啲特別嘅嘢食啦,就係新年前訂定西班牙紅蝦,準備今日整餐好味嘅午餐😍
西班牙紅蝦有好特別嘅味道,佢比其他海蝦嘅味道更濃一點,亦帶一啲腥味,所以處理佢嘅時候諗咗一啲方法去減輕佢嘅腥味,特顯蝦味,或者做法同出邊高級餐廳有啲唔一樣,但係我覺得用薑汁去balance 腥味,係一個唔錯嘅嘗試,大家都可以試吓做😊

調味料:鹽少許、糖少許、淡忌廉50毫升

1. 西班牙紅蝦以流水的方式解凍
2. 把蝦頭及蝦身分開取出蝦腸及沙囊
3. 紅蝦去殼

5. 把紅蝦的頭及蝦殼放進炒香,加入vsop 煮一會兒直至蒸發
