炸雲吞最難做得好係蝦膠,如果蝦膠做得好,雲吞就會好彈牙架啦😊大家睇下d相,了解下要點整啦💕

蝦膠調味料:鹽三份一茶匙、蛋白少許
豬肉調味料:生抽1.5茶匙、糖1/3茶匙、魚露少許、蠔油少許、麻油少許
雲吞醬汁:茄汁2湯匙、白醋1.5湯匙、砂糖1.5湯匙、喼汁1/2茶匙、鹽少許、生粉水(非必要)

1. 大蝦買回來後放進雪櫃中最少三至4小時,然後以流水的方法解凍
2. 大蝦去殼,放在石盅盅爛,直至黏手/如沒有石盅,可以用刀背拍碎
