<p>上星期有幸到LC嘅VIP day，跟法國廚師Esther 學咗呢一道菜式，然後返屋企自己改良一下，冇用到法國春雞，用咗比較容易買到嘅雞髀，冇專登去買法國嘅珍珠洋蔥，用咗平時大家屋企都有嘅紅蔥頭，再改良一下調味料，味道都好好呀！用慢煮嘅方法整嘅雞髀非常鮮嫩幼滑，大家不妨試吓。</p>

<p class="p1">煙燻材料：普洱茶葉（或其他紅茶）一湯匙、麵粉一湯匙、白糖一湯匙</p>



<p class="p1">雞醃料：鹽1.5湯匙</p>



<p class="p1">其他：蜜糖適量、老抽少許</p>

<p>12月考試嘅季節想俾小朋友一啲營養補充，小朋友喜歡喝雞湯，喜歡雞湯嘅鮮甜味，就買來一隻雪鳳凰啦！雪鳳凰其實係泰安雞旗下嘅黑雞，即日鮮劏，剝咗皮用嚟煲湯鮮甜好味，雞肉撕開一絲絲，放埋落湯度一齊食，滋補。今次呢個湯加咗印度椰子同埋蒲魚翅落去煲，聞落去濃濃嘅椰子味，但係飲落去淡淡嘅甜味。大人小朋友都喜歡嘅湯。</p>

<p class="p1">今次10號颱風樺加沙真係好厲害，喺屋企都聽到嘭嘭聲嘅風，而啲雨就好似瀑布咁樣一浸一浸打落個窗嗰度，真係超級恐怖！</p>



<p class="p1">由於知道呢個風會打幾日，所以一早已經安排咗呢兩日準備爸爸想食嘅佛跳牆。</p>



<p class="p1">話說，上次同佢去飲茶嘅時候，佢古古惑惑咁問我：「阿女你知唔知道香港邊度食？佛跳牆好食呀？我好想去試吓好食嘅佛跳牆。」我心諗：「自己整嘅佛跳牆一定最啱口味同埋最足料啦。」仲記得之前收到過一本用手寫嘅食譜，入邊記錄咗佛跳牆嘅材料，同埋大約嘅做法，今次我就簡化佢，做一個屋企都做得到嘅佛跳牆。</p>



<p class="p1">呢度菜式其實唔難整，係需要一啲時間、需要一啲心機同埋一啲耐性。嚟緊中秋節，大家不妨早少少預備，整個佛跳牆俾屋企人食，佢哋一定好開心<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/2764.png" alt="❤" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p class="p1">喺摩洛哥返咗嚟差唔多半個月，終於扚起心肝寫一個摩洛哥嘅食譜！鹹檸檬嫩雞塔吉鍋，喺摩洛哥Cooking Class學嘅菜式，非常容易整，只需要材料夠齊，醃咗啲雞就咁擺落塔吉鍋嗰度煮就搞掂！方便快捷！</p>



<p class="p1">喺寫食譜之前講一講塔吉鍋，佢係一個漏斗型嘅鍋，用陶土去做，非常鎖水，就算長時間炆煮，肉質仍然可以保持鮮嫩，除咗用嚟整摩洛哥菜式之外，用來整炆煮嘅菜式都非常適合，如果冇呢個鍋嘅朋友可以考慮入手一個！</p>

<p class="p1">考試季節整啲簡簡單單嘅嘢，最簡單當然就係炆嘢、焗嘢同埋浸嘢啦！今日就整隻白切雞，煲熱啲水加少少材料落去，放隻雞落去煮滾冚埋個蓋，再加多少少步驟，超級滑嘅雞搞掂。</p>



<p class="p1">用呢個方法煮嘅白切雞，連雞胸都非常之滑、雞髀滑之餘仲好Juicy<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60d.png" alt="😍" class="wp-smiley" style="height: 1em; max-height: 1em;" />。加左黃梔子，令到雞皮嘅顏色更加靚。</p>

<p>祝大家母親節快樂！母親節好多人都會出街食，我自己好少喺過節嘅正日出街食，因為唔想逼人，最好都係喺屋企簡簡單單同屋企人食飯慶祝吓。南乳黃咖喱雞下髀，用上泰國買嘅黃咖喱粉加上香港製造嘅南乳味道會點樣呢？阿女話好好味，簡簡單單用氣炸鍋嚟整，唔使開鑊油去炸，外脆內軟，不錯也。</p>

<p>中午嘅時候想食啲好味嘅雞扒，出街食雞扒好難食到好好味嘅雞扒，都係自己整實際啲新鮮啲！買新鮮嘅雞髀返嚟起自己起骨整最實際！皮煎到脆卜卜，本身打算唔食皮嘅我都忍唔住誘惑，最終成塊食晒！加咗魚露同埋其他香料一齊煮嘅雞扒帶有一啲泰國嘅味道，10分鐘內清碟<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f606.png" alt="😆" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
