<p class="p1">小時候爸爸間唔中都會入廚，我哋都好期待佢入廚，因為每一次佢煮嘢食總會有啲驚喜，煮嘅都係我哋鍾意嘅嘢食！黑椒汁煎牛扒、炸子雞、炸雪糕、燒鵝……當然唔少得嘅係過時過節一定會食嘅茄汁蝦碌！爸爸整嘅茄汁蝦碌酸甜適中，加上彈牙嘅蝦肉、脆卜卜嘅蝦殼，真係成隻蝦都食晒！</p>



<p class="p1">昨日心血來潮，又想整一下茄汁蝦碌，煮咗咁多年今次改一改煮嘅方法，用上新鮮自家製嘅茄汁，唔知整出嚟嘅效果會係點㗎呢？</p>



<p class="p1">自家製嘅茄汁酸甜層次比較豐富，食到新鮮蕃茄嘅味道，加上新鮮嘅中蝦去整，又鮮味又惹味！整多啲茄汁放喺雪櫃，仲可以比小朋友點薯條食<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60d.png" alt="😍" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>因為隻手嘅緣故，所以好耐都冇食過蝦！見到情況好咗少少非常掛住廣式大蝦雲吞，本身諗住整大蝦雲吞，點知姐姐又買錯咗上海餃子雲吞皮皮<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f605.png" alt="😅" class="wp-smiley" style="height: 1em; max-height: 1em;" />，既然其他材料都準備晒，咁就照整大蝦豬肉餃子啦！加咗大地魚粉嘅餡料，味道獨特，今次雖然用咗冷藏嘅蝦，但係亦都好彈牙爽口，唔錯唔錯！最後整咗20幾隻，一次過比屋企人食晒<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f92d.png" alt="🤭" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>用鑄鐵鍋來整大蝦粉絲，唔需要加好多水份，煮出嚟嘅蝦剛剛熟，所有精華落晒粉絲嗰度！用咗一個特別嘅切蝦方法，放喺粉絲上面嘅蝦特別靚，大家快啲睇吓下面嘅食譜啦！</p>

<p>估唔到咁多位朋友鍾意蕃茄濃湯嘅食譜，咁今日就先寫咗呢個食譜俾大家先啦！每一次製作蝦膠，都會剩返好多蝦款！有陣時冇時間，就會將啲蝦殼放喺冰格，需要時用。琴日見有時間，就將用剩嘅蝦殼新鮮煮，唔使浪費咗啲蝦殼，加埋幾個蕃茄仲有雞殼熬製嘅湯一齊去煮，新鮮煮嘅蝦湯係特別好味，有蝦嘅鮮甜味，炒完之後帶點焦香嘅味道<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f606.png" alt="😆" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>我家的小朋友很喜歡嘢雞翼，無論是雞槌、雞中翼、雞全翼&#8230;.全部都愛。但最喜歡的卻是無骨雞翼，啖啖肉，夠晒懶。但無骨雞翼一般都比較林，欠缺咬口。</p>



<p>上星期做多了蝦膠放在冰櫃，今天取其他材料時發現了，心想不如釀在雞翼中為雞翼增加一點點鮮味吧！加了蝦膠的雞翼，多了一點蝦的甜味，口感彈彈，小朋友很愛吃，大人當然也很愛吃啦！ 如果大家懶唔想做蝦膠，也可以買來現成的蝦膠釀入去，味道也不錯啊。</p>

<p>材料：雞全翼6隻、蝦一斤（可用鮮蝦或急凍蝦）、芝麻少許</p>



<p>醃料：鹽少許、老抽少許</p>



<p>其他：牙簽6支、蜜蜂少許</p>

<p>2. 雞全翼以少許鹽醃最少30分鐘，用剪刀把雞槌剪去（可留作其他菜式用）</p>

<p>3. 雞全翼以剪刀拆骨（如圖虛線輕力剪開），注意不釀剪破雞皮</p>

<p>4. 輕輕把雞骨取出</p>

<p>5. 把蝦膠釀入在已拆骨的雞中翼內，以耳簽固定</p>

<p>6. 加入少許老抽在雞翼中，使氣炸後的雞翼上色更漂亮</p>



<p>7. 釀好了的雞翼放氣炸鍋以180度氣炸10分鐘，塗上蜜糖，調高溫度至200度，再氣炸2分鐘即可，取出灑上白芝麻即可</p>

<p>材料： 糯米3杯、白米1杯、蝦米2湯匙、瑤柱1粒、冬菇4隻、花蝦一斤、蒜頭10-15粒、蔥花少許、雞湯2杯、荷葉1塊</p>



<p>步驟：</p>



<p>1. 糯米洗淨，以水浸最少3小時備用</p>



<p>2. 冬菇浸軟後切粒、蝦米洗淨、瑤柱浸軟後撕開</p>



<p>3.花蝦去腳，剪去頭部及去掉沙囊，去腸</p>



<p>4. 在平底鍋中以少許油爆香冬菇粒、蝦米及瑤柱至金黃</p>

<p>6. 加入糯米及洗淨的白米，再注入2杯雞湯鋪平，蓋上蓋子至冒煙，轉小火煮5分鐘即成糯米飯</p>

<p>7. 荷葉洗淨以熱水焯1分鐘，取出及剪去中間硬的位置</p>

<p>8.爆香蒜粒，加份少許生抽、糖及魚露調味</p>

<p>今天經過街市的時候，買了三隻手掌般大的大虎蝦，用上新鮮的材料，以最簡單的方法來烹調，能吃到食物的原味及鮮味。</p>



<p>意粉則用上有機蕃茄熬製的醬汁來煮，不消30分鐘，好味簡單而營養豐富的午餐就做好啦！</p>

<p>材料：新鮮虎蝦三隻、蒜頭四至五粒、意粉適量、車厘茄少許、xo少許<br>醬汁材料：有機蕃茄兩個、蕃茄醬1湯匙、蘋果醋一茶匙、椰糖一湯匙、鹽少許、金不換葉適量</p>

<p>在鍋中爆香蒜頭，加入蕃茄蓉、番茄醬、蘋果醋、椰糖及鹽，已中慢火煮至變杰，即成意粉番茄醬</p>

<p>意粉放滾水中煮7分鐘，盛起後已水喉水沖乾淨備用</p>

<p>虎蝦開邊後去除蝦腸蝦腦，加入少許鹽，先煎香蝦殻，再反轉煎香蝦肉，加入少許xo爆香，盛起備用</p>

										<content:encoded><![CDATA[<p>買了非常新鮮的基圍蝦，本想白灼就算，準備煲水時，打開櫥櫃，看到很久沒有用的玫瑰露酒，突然很想使用它！做醉蝦的話，時間不夠，很難入味&#8230;&#8230;那麼就做個超快又簡單但氣燄十足的火焰蝦啦！這個餸菜，以前常常煮，尤其在宴客的時候，朋友通常都會走入廚房，八八掛掛看看你在煮甚麼，那個時候，看似普通的中蝦煲突然著火，大家都看到嘩嘩聲，實是一款很好的呃like 菜色。</p>
<p>火燒後的中蝦外殻又香又脆，在煮的過程中，大部份的酒精都已煮發，剩下的，是淡淡的酒味和甜味。</p>
<p>要注意<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/26a0.png" alt="⚠" class="wp-smiley" style="height: 1em; max-height: 1em;" />的是，火不能開太大，始終著火也有危險的啊，如害怕火太大，可於著火後關掉爐頭，待蝦變色後蓋上蓋子，火就會熄掉，另外，小孩們都是不入廚房為妙。</p>

<p>材料：中蝦1斤、玫瑰露酒100ml、紹興酒100ml、黑糖3/4 糖匙、蒜頭3粒（磨蓉）、魚露少許</p>
