<p>魚香茄子相信係很多人喜歡的菜式之一，鹹香美味，加上肉碎及軟滑的茄子，送飯一流！但係喺出邊食嘅魚香茄子，一般為了保持茄子鮮艷嘅紫色會進行走油嘅程序，雖然可以保持茄子嘅顏色，但係就好肥，在家煮，整一個少油嘅版本，好味又健康。</p>

<p>夏天非常悶熱，整一個涼拌菜式，降吓溫！茄子富含膳食纖維及皂甘，有助於降膽固醇，加上價錢平宜，實在係又健康又平嘅選擇。</p>



<p>不過煮茄子常常都會遇到茄子皮變色嘅問題！其實茄子只需喺短時間入邊以高溫烹調，就可以保持靚靚嘅紫色啦！</p>

<p>由細到大我嘅腸胃都比較敏感，食錯少少嘢就會肚痾，然後就會頭暈同埋發冷<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f972.png" alt="🥲" class="wp-smiley" style="height: 1em; max-height: 1em;" />前兩日食咗一個叉燒飯，然後覺得開始唔妥，中午去咗七八次洗手間，然後夜晚開始發冷。第二日好少少，但係仍然都有肚瀉嘅症狀。</p>



<p>到咗今日，病情好返啲啦，由於想休息多啲，所以去咗一田買壽司俾小朋友食，經過蔬果嘅位置，見到有好靚嘅茄子，立刻買來一個，準備午餐時候煮嚟食！</p>



<p>病咗嘅時候我嘅身體會自己話我知需要食啲乜嘢，後尾Google睇返原來茄子有止瀉嘅功用，咁就啱晒我啦！</p>

<p>外出吃飯的時候，偶然會點魚香茄子煲來吃。鹹鹹香香嘅鹹魚配合軟軟嘅茄子，美味非常！但係喺街度食嘅魚香茄子煲，成日都有好多油。</p>

<p>經過街市時看見圓轆轆的日式茄子，馬上買回家，製作一道簡易版味增烤茄子。用上白味增去做，味道不死鹹。加入了清酒及味醂，為菜式加添了淡淡的酒香及甜甜的味道。</p>

<p>燒熱煎pan（我用不鏽鋼油脂分離鍋，所以不用加油，其他的今天需要一點油），把茄子放進（格子紋向下），煎香</p>

<p>蒜蓉調味：鹽1/4茶匙、糖少許、魚露少許、生抽1/4茶匙、蠔油少許</p>

										<content:encoded><![CDATA[<p>泰菜中常常做用金不換葉，其獨特的味道令人一試難忘，用碎雞肉炒成打拋雞，簡單又美味，用上豬肉碎呢？油香滿瀉，各有千秋！今天突然想吃茄子，想想茄子加入肉碎及金不換炒香，味覺應該是會很好吧！</p>

<p>豬肉醃料：生抽2茶匙、椰糖少許、胡椒粉少許、油少許</p>
<p>汁料：魚露少許、糖半茶匙、豉油1茶匙、紹興酒少許、蠔油1茶匙</p>

<li>豬肉切碎，以醃料醃15分鐘</li>
