<p>今日下午嘅時候收到中學PE老師嘅電話，話俾我知佢有新鮮嘅芫荽同埋蔥，仲可以送過嚟俾我喎，當然嗱嗱臨要啦！估唔到老師俾咗好多好多芫荽，同埋好多好多蔥！</p>



<p>苦惱着要用呢啲咁新鮮嘅芫荽同埋蔥整啲咩呢？打開雪櫃一睇仲有半隻雞，不如就整個中式芫荽蔥燒雞？</p>



<p>西式嘅燒雞大家食得多，中式芫荽蔥燒雞會係咩味道呢？我實在非常好奇，於是決定做實驗睇吓O唔OK！</p>

<p>好耐之前喺台灣食過一間餐廳，用咗醬料針筒將醬料注射入去食物入邊，呢排做很多蟹粉的菜式，亦都搞搞新意思，試吓將蟹醋注入蝦丸入面效果應該不錯吧。</p>



<p>昨天放假，一起床就想如何製作這道菜式，立馬買來一隻新鮮的大閘蟹做蟹粉，再買來海蝦做蝦膠，加入咗少少鹹蛋黃，令到蟹粉有鹹香嘅味道，而蝦膠呢？用上新鮮嘅海蝦做出嚟嘅蝦膠非常美味，食嘅時候熱辣辣，將自製黑醋加埋入去，美味美味！</p>

<p><strong>很多朋友都喜歡吃咖喱，但又不能吃太辣。他們同樣喜歡咖喱的香味，但又接受不了咖喱太辣。</strong></p>



<p>今天路過常常幫襯的竹蔗店，本是打算買竹蔗茅根煲竹蔗茅根特飲，突然靈機一觸，不如把竹蔗及馬蹄加入黃咖喱增加甜味吧！但過辣的問題還沒有解決，於是又再想，如果除了加入椰奶也加入淡奶的話，效果又會如何呢？</p>



<p>越諗越想知結果，馬上買來牛筋腩試試。加了淡奶的黃咖喱牛筋腩，多了一份淡淡的奶香，竹蔗也為黃咖喱加了一份甜味，辣度中和了，美味依然！大家可以試一試呢！</p>

<p>材料：牛筋腩一磅、馬蹄四粒（略拍）、椰汁400ml、淡奶（大）一罐、黃咖喱醬1.5湯匙</p>



<p>香草材料：紅蔥頭兩粒、竹蔗一支（切片）、香茅3枝、園西根四至五根（略拍）、蒜頭三至四粒</p>



<p>調味料：椰糖兩至三茶匙、魚露適量</p>



<p>裝飾：莞茜及檸檬葉適量</p>

<p>1. 牛筋腩以跑活水的方式處理後切大件</p>

<p>2. 在鍋中加入兩湯匙的油，先爆香香草材料</p>

<p>4. 逐少加入椰汁至椰汁溢出椰油，加入淡奶及馬蹄</p>

<p>早前有很多朋友訂了我推介的蝦醬都紛紛what’s app問我蝦醬除了用來炆豬手外，還可以用來煮甚麼。其實，在安多哥買的蝦醬與香港買的不一樣，它不死咸卻帶著蝦醬的香味但沒有鯹味，所以無論用來炒菜、炆豬手都很好。</p>



<p>見你們很多人買了蝦醬，又自創一下食譜等大家試下煮。從小到大我都愛南乳的味道，今天就試試mix and match. 用南乳、蝦醬來做一道燒雞，不用吊乾，非常方便又好吃！</p>

<p>材料：三黃雞一隻<br>雞醃料：南乳1.5磚、蝦醬一茶匙、花雕酒半瓶蓋、椰糖2茶匙、生抽1湯匙、魚露少許、麻油一茶匙</p>

<p>雞洗淨去頭及頸，沿肚剪開，成蝴蝶狀，以少許鹽醃2小時（過夜更佳）</p>

<p>把雞蒸30分鐘至9成熟</p>

<p>除去多餘的醬料，把雞放氣炸鍋，先以90度風乾15分鐘，再調調溫度至180度，氣炸10分鐘</p>

<p>塗上蜜糖，最後以180度氣炸3分鐘即可</p>

<p>炸釀蟹蓋一向都係老公好鍾意嘅菜式之一。因為佢好懶拆蟹肉，釀蟹蓋呢就啖啖肉，有鮮味又好味，所以老公一向喺酒店都好鍾意食呢個菜式。今次我做嘅釀蟹蓋同平時出邊食嘅有啲唔一樣，加了兩種香草去做，減低了油膩感，增加了清新的感覺！有時間嘅朋友自己試吓整，一定係好好味㗎，因為蟹肉一定係新鮮嘅蟹，食完之後唔會再喺出邊食<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60b.png" alt="😋" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60b.png" alt="😋" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>材料：花蟹三隻、雞蛋一隻、麵包糠適量、生粉少許</p>

<p>香草/香料材料：紅蔥頭兩個、蒜頭三粒、洋蔥¼個、香茅兩支、刁草適量、番茜適量</p>



<p>調味料： 魚露少許、生抽一茶匙、糖少許</p>



<p>步驟</p>



<p>花蟹洗乾淨後，反轉（肚向上）大火蒸15分鐘，放涼後拆肉備用，蟹蓋要洗淨抹乾留用</p>



<p>紅蔥頭切幼片、蒜頭及洋蔥切粒、香茅只取中心最柔嫩位置切粒、刁草及番茜切碎</p>

<p>再炒鍋中加入少許油，爆香香草材料（刁草及番茜除外），放入已拆好的蟹肉炒香，加入調味料。最後加入番茜、刁草及半隻雞蛋拌勻</p>

<p>把蟹蓋放進油中以中小炸，第一次的用途是炸熟蟹肉</p>

<p>再調高溫度，以大火第二次炸蟹蓋，目的是把麵包糠炸至金黃色</p>

<p><strong>上星期自創了這一款紅麴腐乳黑毛豬扒，差不到味道十分之好，層次也十分豐富。</strong></p>



<p>話說在上星期一天外送後很肚餓，買了黑毛豬扒做晚餐，但又不想單調地用生抽及香茅來醃製。打開雪櫃攞靈感，見到大孖腐乳還有兩至三磚，附近的紅麴醬也剩餘不多，於是就來一個Mix and match，用上這兩款醬料來醃製豬扒，差不到腐乳的味道與黑毛豬扒非常夾，加了紅麴也為豬扒帶來淡淡的酒香味。</p>

<p>醃料：腐乳三磚、紅麴將一湯匙、糖兩茶匙、生抽一湯匙、魚露少許</p>

<p>黑毛豬扒洗乾淨後用廚房紙抹乾，再用刀背拍鬆豬扒肉，加入醃料醃製最少30分鐘</p>

<p>黑毛豬扒放在錫紙裏，包好後放氣炸鍋，以200度溫度先氣炸10分鐘</p>

<p>除去錫紙後，掃上蜜糖，以200度的溫度每邊氣炸3分鐘即成</p>

<p>今天到了楊屋道街市買海鮮，巧遇大大隻的瀨尿蝦，十分新鮮，買來一斤回家才想如何炮製。回到家後打開雪櫃，左看看右看看，找出一包金不換、幾塊檸檬葉、幾條紅辣椒乾及幾棵蒜頭，在隨意在雪櫃裏取出一支泰式蝦頭膏，就用它們來煮瀨尿蝦吧！</p>

<p>材料：瀨尿蝦一斤、金不換兩至三棵（取葉洗淨後抹乾）、檸檬葉四至五片（洗淨後抹乾）、蒜頭六至七粒（一半切片另一半略拍扁）、紅辣椒乾三至四條（可省）</p>
<p>瀨尿蝦醃料：孜然粉半茶匙、椒鹽半茶匙、生油適量</p>
<p>炒瀨尿蝦用醬料：泰式蝦頭膏半湯匙、魚露少許、椰糖一茶匙</p>

										<content:encoded><![CDATA[<p>在中醫的角度而言，薑的用途多蘿蘿：止暈又得、止嘔又得。既能預防感冒，也能去水腫。但不是個個人都喜歡肉薑的辛辣味，尤其是小孩，更不喜歡這種味道。</p>
