<p class="p1">老公讚好好味嘅菜式！點解無啦啦煮呢度菜式呢？其實有一個故事：話說幾個月之前有一間電視台嘅編輯曾經搵過我，問我有冇興趣參加一個廚藝比賽，可惜嗰幾個月我有好多旅行要去，所以就婉拒咗啦。</p>



<p class="p1">前兩日突然間睇到呢個廚藝比賽嘅精華片段，參賽者需要煮呢度菜式，我就心諗：「如果我喺現場嘅話會點樣煮呢？」，於是就喺街市買嚟三種主要嘅材料：腸粉、肉蟹同埋豬肉。</p>



<p class="p1">煎香左嘅腸粉加上簡簡單單煮嘅肉蟹同埋豬肉，肉蟹嘅鮮味入晒腸粉入邊，腸粉又大啲脆卜卜，老公話：「好好味呀！」</p>



<p class="p1">由於要記錄低點樣整，所以順手出個食譜俾大家，聽日放假有興趣嘅朋友仔可以試吓整。</p>

<p class="p1">今次10號颱風樺加沙真係好厲害，喺屋企都聽到嘭嘭聲嘅風，而啲雨就好似瀑布咁樣一浸一浸打落個窗嗰度，真係超級恐怖！</p>



<p class="p1">由於知道呢個風會打幾日，所以一早已經安排咗呢兩日準備爸爸想食嘅佛跳牆。</p>



<p class="p1">話說，上次同佢去飲茶嘅時候，佢古古惑惑咁問我：「阿女你知唔知道香港邊度食？佛跳牆好食呀？我好想去試吓好食嘅佛跳牆。」我心諗：「自己整嘅佛跳牆一定最啱口味同埋最足料啦。」仲記得之前收到過一本用手寫嘅食譜，入邊記錄咗佛跳牆嘅材料，同埋大約嘅做法，今次我就簡化佢，做一個屋企都做得到嘅佛跳牆。</p>



<p class="p1">呢度菜式其實唔難整，係需要一啲時間、需要一啲心機同埋一啲耐性。嚟緊中秋節，大家不妨早少少預備，整個佛跳牆俾屋企人食，佢哋一定好開心<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/2764.png" alt="❤" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>呢排要清冰櫃，發現冰櫃入邊有一包上星期買嘅泰國無激素豬手！白雪雪好靚仔，就用嚟整糖醋豬手啦！一個人可以食半隻！泰國嚟嘅豬手有一個好處，就係冇乜毛，唔需要夾毛夾到眼矇，用糖醋汁去煮，仲有汁撈飯添！呢排個人比較懶，成日整埋啲有汁嘅菜式用嚟撈飯，快快脆乾乾淨<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/263a.png" alt="☺" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>外出吃飯的時候，偶然會點魚香茄子煲來吃。鹹鹹香香嘅鹹魚配合軟軟嘅茄子，美味非常！但係喺街度食嘅魚香茄子煲，成日都有好多油。</p>

<p>8號風球前的一天，接小朋友放學之前打算去街市買定啲嘢打風嘅時候煮，去到街市發現人多到好似做節咁。豬肉檔嘅豬肉已經所剩無己，只剩下排骨同埋飛排。馬上買來$50飛排，留返第日打風嘅時候煮。</p>



<p>飛排一般都是用炆或者蒸嘅方法嚟煮，8號風球得閑啲，試吓用半煎炸嘅方法嚟煮，估唔到效果非常理想！飛排半煎炸完質地依然好好，外脆內軟。</p>



<p>加埋青檸蜜糖去煮，甜甜酸酸非常開胃！大家經過豬肉檔買到飛排嘅話，就不妨試吓整啦。</p>

<p>今天途經尖沙咀，就到Donki行一下。居然發現有金目鯛魚頭賣，大大的一個，連埋背脊骨、魚鰭，只售$100。原本晚上做焗豬扒飯的我，突然間轉了做日式料理。</p>



<p>買了魚頭後，再買來一點日本直送的菌類、大根、及北海道直送的白雪豬肉，晚上就來煮一道暖笠笠的金目鯛白雪豬肉鍋。</p>



<p>用金目鯛做湯底，魚油豐盈！再加上獨特的魚香味，十分美味的一道菜。</p>



<p>另外今日終於用咗師傅推介嘅LC 保溫架，豬肉鍋由頭到尾都係好熱，好好味！</p>

<p>材料：金目鯛魚頭一個、白雪豬肉一pack、菌類適量（我用了舞茸菇、鮮冬菇及信洲菇）、日本紹菜半個、昆布1塊、日本大根半條、薑片3-4片</p>



<p>調味料： 味增2湯匙（自行調節）、味醂1湯匙、鹽適量</p>



<p>其他：熱水2L</p>

<p>步驟</p>



<p>1. 洗淨金目鯛魚頭，除去魚的鰓及瘀血，把魚頭切件</p>

<p>2. 昆布洗淨後以清水浸軟（約15分鐘後切件）</p>

<p>3. 所有菌類洗淨，在鮮冬菇上面以小刀𠝹成十字形、紹菜切件（留根部待用）、日本大根切厚件</p>

<p>4.在炒鍋中加入薑片爆香，加入金目鯛魚頭爆香（切記一定要完全煮熟爆香），加入熱水、紹菜根部、一半大根件，以中火煮15分鐘，加入調味料試味（如果是做魚湯的話，不用加太多的鹽，如果做豬肉鍋的話，則需要比較鹹一點）</p>

<p>5. 在鍋中底放進大根片，再排上菌類、紹菜件</p>

<p>6. 過濾已煲好的魚湯，加入白雪豬肉，以中火煮熟即成</p>

<p>很久都沒有煮黃咖喱，因為在香港很難買到好吃的黃咖喱醬。今天在九龍城買到大盒裝的藍象黃咖喱醬，突然又想吃，於是就買來黑毛豬豬扒製作黃咖喱給家人吃。</p>



<p>黃咖喱的辣度比紅咖喱及青咖喱為輕，加入了椰汁及香草後。又香又濃，小朋友也能吃。配以薄餅一齊吃，把泰國館子的味道帶回家。再者疫症嚴重的日子，大家也能在家做一味黃咖喱豬扒，和家人大吃一頓吧！</p>

<p>材料：黑毛豬豬扒8件（今次做八人份量所以比較多）、黃咖喱醬四湯匙、魚露一湯匙、椰糖半湯匙、椰汁1000 ml、南薑三至四片、檸檬葉三至四片、香茅四至五支（只要根部，切片備用）、青檸汁少許、莞茜根4-5條、水約100ml、蝦醬1/3茶匙</p>

<p>豬扒醃料：鹽少許、雞蛋一隻</p>

<ul><li>黑毛豬豬扒解凍後抹干，加入少許鹽及一隻雞蛋拌勻後，放氣炸鍋，以180度焗10分鐘至九成熟（如沒有氣炸鍋，也可以在鑊中煎香），切件備用。</li></ul>

<ul><li>把椰汁逐少加入黃咖喱（每次加入約200毫升）至出油，再加入椰汁，直至全部椰汁加入為止（此步驟非常重要，不可以直接把所有椰汁加進，否則椰油難以釋出，咖喱的顏色便變得非常暗淡）</li></ul>
