<p><strong>今天路過海鮮檔的時候，老闆娘又說花螺特別新鮮，還二話不說給了我一斤花螺，說給我回家炮製料理。既然老闆娘叫我創作食譜，當然也不能讓她失望吧！</strong></p>



<p>辣酒煮花螺大家也吃過，雖然好吃但吃得太多辛辣的東西對腸胃也不好。今次希望吃到花螺的鮮味，就用其他海鮮去襯托牠吧！首先用新鮮蝦殼淆湯，再配合鰹魚汁、清酒及味醂，把花螺的鮮味提升。吃完一顆又一顆，實在太美味了！</p>

<p>材料：花螺一斤、蝦殼適量、蔥頭兩粒（切片）、蒜頭三粒（拍扁）、薑片兩片、蔥花適量</p>



<p>調味料：日本百味噌醬2茶匙、日本鰹魚汁兩茶匙、醬油兩茶匙、清酒一杯、味醂一湯匙、糖少許</p>

<p>步驟</p>



<p>1. 花螺洗乾淨後放滾水中灼3分鐘至熟，取出夜涼</p>



<p>2. 花螺去掉薄殼備用</p>

<p>3. 新鮮蝦殼放氣炸鍋，以200度的溫度烤焗5分鐘至脆身，取出放進炒鍋中爆香，加入1量杯水，煮滾後以中火煮10分鐘，加入適量的鹽，即成簡易的蝦高湯</p>

<p>4. 在炒鍋中爆香蒜片、薑及蔥頭，加入花螺炒香，注入清酒，煮至酒蒸發一半，加入其他調味料拌勻煮滾。關火後加入蔥花即可</p>
