<p class="p1">天氣逐漸轉涼，好想食啲有湯嘅菜式！加上工人姐姐星期日放假，於是星期六早早準備定清湯牛腩，今日有得食。</p>

<p>話呢度菜式係童年嘅回憶應該點都冇錯，大家屋企一定有食過，感覺好簡單嘅菜心炒牛肉其實並不容易煮得好食，我成日覺得傳統嘅菜式，例如剁豬肉菜心炒牛肉呢啲其實係高難度嘅菜式，要煮得牛肉剛剛熟、菜心爽爽脆脆、有少少汁，但係唔係太水，當中其實有唔少嘅技巧。今日就同大家分享一個容易處理新手都煮到菜心炒牛肉，喜歡嘅朋友記得like同埋收藏個食譜啦。</p>

<p>晚飯後收到一位朋友仔嘅PM，問我可唔可以俾美極炒牛肉飯嘅食譜佢，因為明天想整比囡囡食！可惜嘅係我仲未寫<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f605.png" alt="😅" class="wp-smiley" style="height: 1em; max-height: 1em;" />，因為上次整嘅時候冇影到steps的相，本身諗住再煮嘅時候先影相，但係既然有人想要就今日寫咗先啦，啲相就再候補加入入去！</p>



<p>美極牛肉炒飯，其實係好容易整嘅，材料只係得幾樣嘢，再炒幾炒5分鐘就食得啦！大家睇住食譜先，遲吓再補相啦！</p>

<p>材料：牛肉60克、芥蘭或菜心莖部位置4-5條（切片）、鮮蝦4-6隻（先灼熟然後切粒）、雞蛋1隻、隔夜飯1.5 碗、蒜頭兩粒拍扁</p>



<p>調味料：美極1.5茶匙、糖少許、魚露少許</p>



<p>牛肉醃料1: 生抽半茶匙、蠔油少許</p>



<p>牛肉醃料2: 粟粉1/3茶匙、水1.5茶匙、油少許</p>



<p>其他：蔥花適量（可省）</p>



<p>步驟：</p>



<p>1. 牛肉買回來後，切成粒粒，先用醃料1醃15分鐘，再加入醃料2醃15分鐘</p>



<p>2. 在炒鍋中加入適量的油，然後爆香兩粒蒜頭，加入牛肉粒炒香至九成熟盛起。</p>



<p>3. 再同一個鍋，加入少許油，首先爆香菜心或芥蘭的莖部，然後加入一隻雞蛋炒香後切碎，加入隔夜飯炒勻</p>



<p>4. 牛肉回鍋與隔夜飯炒勻，加入調味料後試味至合適，然後加入蝦粒炒一會兒即可。</p>

<p>出街食飯唔同餐廳嘅肉醬意粉有唔同嘅味道，其實我之前都整過肉醬意粉，但係小朋友話硬係爭少少嘢咁樣，搞吓搞吓，變咗琴日嗰個改良版肉醬意粉，今次佢哋都覺得好滿意！多咗蔬菜、多咗調味料！味道當然立體d啦！</p>

<p>打風前一日傍晚去到街市咩都冇得賣！只係勉強買到少少材料：牛腩邊一斤、紅蘿蔔一個、青瓜同埋一啲生果。</p>



<p>返到屋企之後見到屋企仲有兩個蕃茄、仲有之前買嘅刀削麵，當然仲有唔少嘅香料啦！正統嘅台灣牛肉麵會用牛骨去熬製湯底，打風邊度？仲有牛骨呢就用冰櫃入面之前整定嘅雞湯底啦！簡單版嘅台灣牛肉麵，一樣好食。台灣牛肉麵其實唔難整，不過係需要一啲時間，如果情況許可嘅話，用新鮮牛骨熬湯，再用牛坑腩同埋牛筋來整更加好食（懶嘅就去CC Super買牛湯底啦）</p>

<p>泰國食品比較少牛肉嘅菜式，而我亦都比較少食牛肉，但係屋企嘅阿仔就係牛魔王，佢好鍾意食燒牛肉！紅酒燒牛肉、日本燒汁牛肉、泰式烤牛肉全部都好鍾意食。今日喺街市買咗一舊好靚嘅新鮮牛柳，一於就用嚟整泰式烤牛肉啦！</p>



<p>烤牛肉並唔難做，材料又簡單，就算唔加泰式醬汁都一樣好好食！</p>

<p>鑊仔炒牛柳，甜甜酸酸非常好送飯嘅一道菜式！有時去茶餐廳唔知道食啲乜嘢好，就會點呢一道菜式。茶餐廳嘅鑊仔炒牛柳好好味，因為加咗梳打粉同埋鬆肉粉，炒出嚟嘅牛柳又鬆又滑，特別美味。</p>



<p>喺屋企整想健康啲，唔想落化學物去整松牛柳有咩方法呢？可以用生果酵素或者用乳酪！呢兩個方法都可以令到牛肉鬆軟多汁好好味！</p>
