<p>幾天前放假，想同阿女玩下做吓親子嘅手工。諗起多年前喺酒店食過嘅金魚蝦餃，蝦餃一向自己都有整開，做金魚形狀應該都不是太難吧！</p>



<p>早上喺街市買來新鮮嘅泰國花蝦，放冰格冰幾個鐘頭再攞出來做蝦餃，鮮蝦做嘅蝦餃非常美味！加埋喺北海道直送嘅帶子同埋黑毛豬肉，配上金魚可愛嘅造型，小朋友話：「我唔捨得食呀<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f979.png" alt="🥹" class="wp-smiley" style="height: 1em; max-height: 1em;" />」</p>



<p>放假嘅時候就同小朋友一齊試吓整啦！</p>

<p>話說我媽咪好鍾意食豉汁鳳爪，細細個去酒樓食鳳爪都仲係小點，唔知幾時開始鳳爪變咗做大點，聽日去尖沙咀飲茶，帶點係$35一碟。其實有時唔係錢嘅問題，而係酒樓嘅鳳爪得幾件，每次都要叫兩籠先夠食！既然係咁不如自己試吓整，起碼可以自己選擇材料，鍾意由頭煮到尾嘅朋友可以用新鮮雞腳炸香再整，懶啲嘅就可以用急凍已經炸好左嘅雞腳，悉隨尊便。</p>

<p>奶奶好鍾意食鮮竹卷，有一次喺酒樓食到一個好特別嘅鮮竹卷，就好似將棉花雞嘅材料包左喺鮮竹卷入面咁樣。一般嘅鮮竹卷係有豬肉甘筍等等嘅材料，加咗魚肚入去味道層次豐富咗好多。</p>



<p>在酒樓吃嘅版本，只有魚肚及韮黃。我自己覺得魚肚同冬菇係絕配。琴日冇用晒啲龍蝦膏，所以將正如嘅龍蝦膏加埋落去煮，老公話超勁好食。煮嘅時候加埋蝦膠落去，味道層次感更佳！</p>

<p>步驟：</p>
<p>1. 糯米洗淨以室溫水浸最少3小時，白米洗淨（不用浸）備用</p>

<p>到酒樓飲茶，家中的各位都很喜歡吃燒賣。唯獨是我不大喜歡吃酒樓的燒賣，因為酒樓的燒賣多帶肥肉，味道亦較濃。早前見到朋友的食譜教其他人做燒賣，一直都想試試自己做。但到了很多地方都找不到燒賣皮，於是放棄了這個念頭。</p>
<p>昨天路經荃灣，在一間賣粉麵的鋪頭，看了一直想買的燒賣皮。立即就買了，決心製作燒賣作為家中小皇帝們的下午茶。</p>
<p>在荃灣買的燒賣皮蒸煮後非常透薄，餡料則用上街市買的新鮮黑毛豬和冰箱裡的墨魚膠及蝦膠，這款蝦膠味道鮮美，還有大大粒蝦肉、墨魚膠口感也不錯，但略帶咸。</p>
<p>另外，用了在朋友介紹菇場買的大冬菇。由於墨魚膠是黑色的所以做出來的燒賣比較特別。加上了新鮮的蟹籽，口感脆脆，食這個做下午茶，大滿足呢<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/263a.png" alt="☺" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>材料：梅頭豬肉$30、墨魚膠150克、蝦膠150克、冬菇2隻（我的冬菇很大，所以自行調節啦）、燒賣皮50塊、多籽少許</p>
