<p>完成了幾天的外送，也要對自己好一點。昨天經過九龍城城南道的時候，發現有咖喱葉賣，非常新鮮的咖喱葉要買來做一道非常懷念的菜式-新加坡黑胡椒炒蟹。</p>



<p>記得在大約六年前，和一班中學時候的好朋友到新加坡旅行，在一間名叫冇招牌的餐廳吃了十分美味的黑胡椒炒蟹，簡直是一試難忘。不喜歡吃太辣的我，本以為黑胡椒炒蟹十分辣，但在這裏吃的黑胡椒炒蟹帶有黑胡椒的香味，辣味卻不蓋過蟹的鮮味。在香港幾家餐廳試過黑胡椒炒蟹，也試不到這個味道！</p>



<p>昨天就膽粗粗，試吓自己做。味道雖然還不及冇招牌餐廳，但是自己家了新鮮的胡椒，帶一點清新的感覺，也有黑椒的香味。</p>

<p>材料：肉蟹一隻（大約斤半左右）、咖喱葉四至五棵（取葉用）、黑胡椒兩至三湯匙（略拍-不要拍得太碎否則會很辣）、蒜頭四至五粒、薑3-4塊、蔥段適量、牛油半湯匙</p>



<p>調味料：生抽兩湯匙、老抽少許、蠔油兩茶匙、糖半茶匙、麻油少許、料理酒少許</p>

<p>步驟：<br>1.肉蟹洗乾淨後切件，放入氣炸鍋，已200度溫度炸9分鐘，取出備用<br>2.在炒鍋中加入牛油炒香，放入蒜頭、姜、黑胡椒粒、蔥白爆香</p>

<p><br />4.注入料理酒少許至香氣四溢<br />5.加入調味料（麻油除外），以中慢火煮至焦香及收汁，最後加入少許麻油拌好即成</p>
