<p>細佬從韓國回來後好想食我整嘅炸雞翼，阿女亦都好耐冇食過我整嘅嘢食！今日就如佢哋所願整單骨雞翼啦<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60e.png" alt="😎" class="wp-smiley" style="height: 1em; max-height: 1em;" />每次整單骨雞翼都會爭住食唔夠食，可惜嘅係屋企只得返12隻雞翼，整出嚟只有24件，小朋友爭下爭吓好快食晒！我自己只食到三件<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f92d.png" alt="🤭" class="wp-smiley" style="height: 1em; max-height: 1em;" />今次嘅雞翼，用上左土匪味道嘅孜然粉，經過油炸之後，更香更好味，大家快啲一齊睇吓點樣做啦！</p>

<p>雞翼呢樣嘢真係大小咸宜！個個都鍾意食！細佬係雞翼嘅fans，最鍾意就係食雞中翼<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60f.png" alt="😏" class="wp-smiley" style="height: 1em; max-height: 1em;" />而小朋友最鍾意梗係食香口嘅雞翼啦，今次棄用氣炸鍋，用最簡單嘅方法煎雞翼，由生煎到熟，簡簡單單係最好味嘅！</p>



<p>土匪雞翼，其實就係用咗好多唔同香料醃製嘅雞翼，食嘅時候帶有唔同香料嘅香味，令人回味無窮！大家快啲睇吓樂思廚版嘅土匪雞翼要點樣整？</p>

<p>欠左大家勁耐嘅食譜，因為一路都買唔到新鮮墨魚，所以整唔到新嘅食譜出嚟！尋日去到老闆娘嗰度居然又有大墨魚！即刻買返嚟，咁即係代表今日冇得懶啦<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f61d.png" alt="😝" class="wp-smiley" style="height: 1em; max-height: 1em;" />咁今日就整墨魚膠、整墨魚丸、整雞翼。</p>



<p>墨魚膠嘅食譜之前已經出過，今次嘅步驟就省略咗佢，所以就咁睇睇落去好容易整！如果懶嘅朋友可以用現成嘅墨魚膠同埋無骨雞翼，咁樣整20分鐘左右就有得食㗎啦！</p>

<p>以前喺佐敦返工嘅時候，好鍾意幫襯一間餐廳，一來好近學校，二來佢嘅瑞士汁好出名！相信鍾意食瑞士汁雞翼嘅朋友都知道係邊間餐廳。</p>



<p>幾星期前再造訪餐廳，瑞士汁仍舊好吃，但是雞翼的質素好似冇之前咁好，有少少雪味，雖然唔明顯，但比之前係有少少分別嘅。</p>



<p>昨天晚上，我和女兒吃意粉，聽過突然間諗起呢間餐廳嘅瑞士汁雞翼，不如就自己整俾老公同仔仔食啦！</p>



<p>超級市場都有瑞士汁售賣，但係味道始終唔合心水，瑞士汁都係自己整好！</p>

<p>大人小朋友都愛食雞翼！雞翼亦係上班一族喜歡的食材之一，放工後樂快煮好，個個都鐘意，的確係快靚正！</p>



<p>之前收到不少inbox 查詢，問有關雞翼去雪味問題。首先，我用開的泰國牌子的雞翼雪味不重，大家選材料時可選擇比較優質的食材，味道差好遠的！另外，可把雞翼放在淡鹽水中浸15分鐘，沖水後沿骨擠出血水，都可以改善雪味的問題！</p>



<p>講返改良版雞翼先，今次用上懶人氣炸鍋焗完再煮一陣，懶到出汁！無氣炸鍋的朋友，將雞翼炸香的效果都一樣啊！</p>

<p>唔知道大家對buttermilk是否有認識?喺外國炸雞嘅食譜入邊，好多時候都會用到buttermilk去醃雞，buttermilk嘅味道就好似酸奶咁，可以令到雞肉嘅肉質保持鮮嫩多汁，上星期途經cc super，見到有特價嘅buttermilk賣，馬上買來一支，夜晚就用來做炸雞翼！</p>



<p>雞翼嘅醃料加咗黃咖喱粉、香茅同埋班蘭葉等等，帶有淡淡的黃咖喱味，小朋友最愛！</p>



<p>買唔到buttermilk的話，可以使用鮮奶，加入少許檸檬汁，放室溫15分鐘也可！</p>

<p>小朋友都鍾意食雞翼又鍾意食蝦餅，不如就將兩樣嘢二合為一，做蝦膠釀雞翼。起骨既時候，阿女話：「好耐未食過黃咖喱，我哋幾時食黃咖喱炒蟹？」，靈機一觸即時回答：「用黃咖喱整雞翼如何？加埋蜜糖同埋芝麻應該幾好味！」，於是乎我哋就一齊做咗呢個自創嘅食譜啦！</p>



<p>用上泰式黃咖喱粉去醃雞翼，雞翼帶有淡淡的黃咖喱香味，但一啲都唔辣小朋友都食到！讓入新鮮手打嘅蝦膠，食落去又彈牙又鮮味。最後加入蜜糖芝麻汁，雞翼帶少少甜味，小朋友最愛呀！</p>

<p>我家的小朋友很喜歡嘢雞翼，無論是雞槌、雞中翼、雞全翼&#8230;.全部都愛。但最喜歡的卻是無骨雞翼，啖啖肉，夠晒懶。但無骨雞翼一般都比較林，欠缺咬口。</p>



<p>上星期做多了蝦膠放在冰櫃，今天取其他材料時發現了，心想不如釀在雞翼中為雞翼增加一點點鮮味吧！加了蝦膠的雞翼，多了一點蝦的甜味，口感彈彈，小朋友很愛吃，大人當然也很愛吃啦！ 如果大家懶唔想做蝦膠，也可以買來現成的蝦膠釀入去，味道也不錯啊。</p>

<p>材料：雞全翼6隻、蝦一斤（可用鮮蝦或急凍蝦）、芝麻少許</p>



<p>醃料：鹽少許、老抽少許</p>



<p>其他：牙簽6支、蜜蜂少許</p>

<p>步驟：</p>

<p>2. 雞全翼以少許鹽醃最少30分鐘，用剪刀把雞槌剪去（可留作其他菜式用）</p>

<p>3. 雞全翼以剪刀拆骨（如圖虛線輕力剪開），注意不釀剪破雞皮</p>

<p>4. 輕輕把雞骨取出</p>

<p>5. 把蝦膠釀入在已拆骨的雞中翼內，以耳簽固定</p>

<p>6. 加入少許老抽在雞翼中，使氣炸後的雞翼上色更漂亮</p>



<p>7. 釀好了的雞翼放氣炸鍋以180度氣炸10分鐘，塗上蜜糖，調高溫度至200度，再氣炸2分鐘即可，取出灑上白芝麻即可</p>
