<p class="p1">老公讚好好味嘅菜式！點解無啦啦煮呢度菜式呢？其實有一個故事：話說幾個月之前有一間電視台嘅編輯曾經搵過我，問我有冇興趣參加一個廚藝比賽，可惜嗰幾個月我有好多旅行要去，所以就婉拒咗啦。</p>



<p class="p1">前兩日突然間睇到呢個廚藝比賽嘅精華片段，參賽者需要煮呢度菜式，我就心諗：「如果我喺現場嘅話會點樣煮呢？」，於是就喺街市買嚟三種主要嘅材料：腸粉、肉蟹同埋豬肉。</p>



<p class="p1">煎香左嘅腸粉加上簡簡單單煮嘅肉蟹同埋豬肉，肉蟹嘅鮮味入晒腸粉入邊，腸粉又大啲脆卜卜，老公話：「好好味呀！」</p>



<p class="p1">由於要記錄低點樣整，所以順手出個食譜俾大家，聽日放假有興趣嘅朋友仔可以試吓整。</p>

<p>認識我嘅朋友都知道，我一但下左決心，就要將事情盡力做好！尋日愚人節同老公出去食早餐，佢成日叫我煮粉d外送，用多d時間做youtube，咁就唔駛咁辛苦同埋可以好好分享美食俾大家！</p>

<p>今日係大年初一，我相信大家嘅Facebook都應該係俾啲賀年嘅訊息洗咗版㗎啦，咁我就特別啲出個東南亞食譜俾大家啦！</p>



<p>新加坡辣椒膏炒蟹，大約10年前左右帶嗰陣時只有一兩歲嘅阿女去新加坡嘅時候，喺聖淘沙嘅一間餐廳食到呢一道菜式，覺得超級好味！仲記得當年嘅蟹係用一隻兩斤幾嘅大肉蟹，兩個人根本冇可能食得晒。餐廳嗰度只係可以選擇chili Crab或者黑胡椒炒蟹，感覺上黑胡椒好似好辣咁，於是就揀咗睇落去冇咁辣嘅辣椒膏炒蟹。最後只係食剩少少，帶埋返酒店第二日做早餐！</p>



<p>辣椒膏炒蟹，雖然個名叫做辣椒膏炒蟹，但係其實得少少辣，多多甜！佢同黃咖喱炒蟹有一個共同嘅地方，就係有好多蛋！老公最鍾意用啲蛋汁來撈飯！</p>



<p>今日，突然心血來潮想食，雖然買唔到當年嘅兩斤幾大肉蟹，買來細細隻12両嘅細肉蟹過吓口癮都唔錯！</p>



<p>之前問新加坡嘅朋友辣椒膏炒蟹嘅主要材料，今次自己加加減減，製作一個樂思廚版本嘅辣椒膏炒蟹，我覺得好好味喎！而阿女居然都好鍾意，仲有幾日假放，好多海鮮檔都有開門，大家快啲去試吓！</p>

<p>呢排街市又有花蟹，話說係咁多蟹入邊其實我係最鍾意花蟹，雖然肉唔算好多，但係富有海水味而且鮮甜！</p>



<p>花蟹嘅食譜我製作咗好多，但係好少用花蟹來做湯羹。幾日前經過街市，買來兩隻藍花蟹、又經過豆腐店，見到剛剛整好嘅新鮮嫩豆腐，咁不如就將蟹肉同埋豆腐加埋一齊，整一個鮮甜非常嘅豆腐湯羹啦！</p>



<p>豆腐湯羹用上蟹殼同埋雞湯來熬製，簡簡單單但係好好味呢！</p>

<p>今日有點事做，叫姐姐幫手去街市買餸，佢就買嚟咗兩隻紅花蟹、一啲豬肉同埋一啲芹菜芫荽咁，回家嘅時候就用呢啲材料炮製一道菜色。</p>



<p>加入左泰式魚露添加左鹹香嘅味道好好味！新鮮嘅紅花蟹，蟹味鮮甜！不錯！不錯！</p>

<p>材料：紅花蟹兩隻（大約半斤）、梅頭豬肉$20（切碎）、芹菜莖部（切粒）、芫荽莖部（切粒）、蒜頭兩粒（切粒）、紅蔥頭一粒（切粒）、細泰國粉絲一個（浸軟）</p>



<p>調味：魚露一茶匙、蠔油一茶匙、生抽少許、糖少許，水200 ml、老抽少許</p>



<p>其他：青檸一個、炒米粉適量（可省）</p>

<p>步驟</p>



<p>1. 紅花蟹洗淨，肚向上蒸13分鐘，拆肉後備用，留蟹蓋備用</p>



<p>2. 在炒鍋中加入適量的油，先爆香蒜頭及紅蔥頭，再加入梅頭豬肉炒香至九成熟</p>

<p>蒸水蛋係小朋友最愛嘅食物之一，非常嫩滑的蒸水蛋用來拌飯吃一流！在相熟的海鮮檔買來兩隻海花蟹，size不太大隻，因為很早就買回家，所以先把它蒸了10分鐘，留了蟹汁備用。晚上就用它來蒸水蛋。</p>

<p>1. 海花蟹洗淨，先蒸10分鐘至8成熟</p>

<p>2. 雞蛋打好，放入雞湯及花雕酒拌勻</p>



<p>3. 把雞蛋放入容器中（想幼滑一點的話 ，用隔篩隔去氣泡就可）</p>

<p>昨天在西貢買來兩隻紅花蟹，女兒說想吃上湯炒花蟹，今次是用了一個半煎炸的方法來做，加了花雕酒，帶點淡淡的酒香，只用了少許調味，就帶出了海蟹的鮮味。加上不需要油炸，比較簡單，大家可以考慮用呢個方法製作花蟹呀！</p>

<p>材料：紅花蟹兩隻、蔥段適量、薑片四片、紅蔥頭三粒（一開四）、洋蔥半個（切件）、生粉適量</p>

<p>上湯材料：雞湯200 ml、生抽一湯匙、蠔油一湯匙、糖少許、生份水適量</p>



<p>其他：油兩湯匙、花雕酒一瓶蓋</p>



<p>步驟</p>



<p>1. 海蟹洗乾淨，切件，沾上少許生粉備用</p>

<p>2. 在炒鍋中加入兩湯匙的油，爆香紅蔥頭、薑片、洋蔥件及蔥白，放在鍋的一邊後加入紅花蟹件爆香至8成熟</p>

<p>3.加入花雕酒，蓋上蓋子大約1分鐘，再加入上湯材料（生粉水除外），蓋上蓋子煮3-4分鐘</p>
