<p>到西餐廳吃飯時，常常都會有餐湯贈送：紅湯定係白湯，一般而言我都會揀紅湯，原因是白湯每一次飲落去都係成口麵粉，欠缺鮮味、海鮮也吃得出是急凍的海鮮<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f648.png" alt="🙈" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f648.png" alt="🙈" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f648.png" alt="🙈" class="wp-smiley" style="height: 1em; max-height: 1em;" />，今天是女兒的生日，她突然間想飲白湯，就做一個表面看似簡單，實際步驟不少的周打蜆肉湯。</p>



<p>這個湯看來與普通的西餐廳沒有兩樣，卻是以新鮮魚湯做湯底及用上新鮮大蜆，女兒一飲，覺得非常美味，大家也試試煮吧！</p>

<p>魚湯底材料：海魚4條（我用了紅衫魚）、水三杯、薑兩片</p>



<p>蜆湯湯底：大蜆一斤、水300 ml</p>



<p>香草材料：蒜頭四粒、薯仔兩個、甘筍半條、洋蔥半個（以上全部切粒）、百里香適量</p>



<p>其他材料：煙肉3塊（切粒）、鮮奶一盒220ml、鮮忌廉一盒、白酒100mL</p>

<p>步驟：</p>



<p>1. 先準備魚湯底：海魚洗乾淨，抹乾水份，放在已經燒熱的炒鍋中，加入薑片煎香後，加入熱水煮15分鐘，加去魚肉及魚骨，即時成為魚湯底</p>

<p>2. 準備蜆肉湯底：在小鍋中加入300 mL的水，放入已經洗乾淨的大蜆直至大蜆開口，取出蜆肉，也把蜆水留用（最好先隔掉泥沙）</p>

<p>3. 在小鍋中先炒香煙肉，盛起備用</p>

<p>4. 在鍋中爆香蒜頭、洋蔥再加入甘筍及薯仔爆香，加入白酒煮一會</p>

<p>5. 把魚湯及蜆湯加入香草材料中，煮10分鐘</p>

<p>6. 加入牛奶及忌廉，再煮10分鐘</p>

<p>7. 把所有材料放進攪拌機攪碎，使用隔篩隔渣</p>

<p>8. 周打湯底回鍋煲滾，加入蜆肉（也可加入其他海鮮）、百里香及煙肉。最後加入適量的鹽調味即可以</p>
