<p>小時候去大排檔食飯，爸爸一定會點辣酒煮花螺， 尤其是在秋冬的時候，小時候的冬天天氣比較寒冷，常常都要穿羽絨，吃完這個辣酒煮花螺之後身體變得暖暖的，手腳冰冷的問題也隨之而舒緩。但是在大排檔吃的辣酒煮花螺不太乾淨，吃完後往往肚痛<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f648.png" alt="🙈" class="wp-smiley" style="height: 1em; max-height: 1em;" />，加上不能調節辣度，有時候真的辣到飛起<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p>我喜歡辣酒煮花螺帶甜味多個帶辣味，所以比較喜歡加多一點柱侯醬，不加辣油而加豆瓣醬，吃落去味道帶一點點辣味，多了一點甜味，海鮮的鮮味沒有被蓋過，非常滋味呢！</p>

<p><strong>材料：花螺一斤半、薑片</strong>4<strong>片、蔥頭</strong>4<strong>個（一開</strong>4<strong>）、蒜頭</strong>4<strong>粒（切片）、八角</strong>2<strong>粒、蔥段適量</strong></p>



<p><strong>調味料：柱侯醬一湯匙、豆瓣醬兩茶匙、生抽兩茶匙、蠔油少許、魚露少許、椰糖少許、花雕酒一杯、水少許</strong></p>

<p><strong>步驟</strong></p>



<p>花螺先以清水浸最少兩小時後洗乾淨</p>



<p>在鍋中加入清水、兩片薑片、一半蔥段煮滾，放入花螺煮大約2分鐘，盛後沖水備用</p>

<p>在炒鍋中爆香兩片薑片、兩粒八角、蒜頭、蔥段及蔥頭，加入柱侯醬爆香</p>

<p>加入花螺略炒、注入花雕酒直至酒量減少一半，把其他調味料放進，加入少許的水，蓋上蓋子煮2分鐘即可</p>
