<p>明天又去同一間學校教少數族裔嘅學生整冰皮月餅，希望令佢哋明白多啲中國嘅文化，由於傳統月餅製作需時，學生亦都冇咁大興趣，所以今次整咗呢一個芒果忌廉芝士冰皮月餅，食落去就好似食甜品一樣，唔會覺得好漏，對於麻麻哋月餅嘅我，呢一個作為甜品都係一個唔錯嘅選擇，既然要寫食譜比同學仔，就喺度寫埋食譜俾大家啦。今次使用台灣牌子嘅預拌冰皮粉，節省一啲時間。</p>

<p>到曼谷旅行，最喜歡就去食芒果糯米飯，嗰陣時每晚都要食芒果糯米飯做甜品！後來學識咗點樣整呢個甜品之後，知道原來要落好多糖，所以就少食咗<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f913.png" alt="🤓" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p>自己整嘅芒果糯米飯，可以調節白糖嘅份量，可以減糖感覺健康啲，大家快啲嚟睇吓點樣整啦！</p>

<p>去長洲最鍾意就係幫襯一間甜品店食芒果糯米糍，皮薄餡又靚！自從疫情之後就冇去長洲啦，今日突然間想食，不如就自己整啦！之前去長洲食糯米糍嘅時候，八八掛掛問過老闆要點樣整，之前都整過幾次，但係就覺得粉味太重，今次自己再做，調整一下份量，粉味唔重之餘仲好煙韌，非常好吃！用三個芒果，可以整到六大個！抵食抵食！</p>

<p>材料(6大個份量）：糯米粉200g、鷹粟粉20g、砂糖60 g、椰漿300 g、菜油20g、大芒果6個</p>



<p>熟糯米粉材料：糯米粉50 g</p>

<p>步驟</p>



<p>1. 椰漿放入小鍋中加熱至微暖後加入砂糖拌勻直至溶化（注意<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/26a0.png" alt="⚠" class="wp-smiley" style="height: 1em; max-height: 1em;" />不要加熱至冒煙）</p>

<p>2. 把椰漿加入糯米粉及粟粉中拌勻後注入菜油</p>



<p>3. 把粉漿過篩，放入以塗油的容器中蒸15分鐘</p>

<p>4. 取出後用筷子攪拌4-5分鐘至光滑，待涼後放雪櫃備用</p>

<p>5. 把50g的糯米粉放在鍋中煮熱，即成熟糯米粉</p>

<p>6. 把芒果切開（一開二）共6件</p>



<p>7.在雪櫃取出粉團，分成6份，每份大約75 g,把粉團盡量壓扁</p>

<p>8.將芒果肉放在入面再包起（如果粉團比較黏手的話，先把手放在熟糯米粉中再搓粉團）</p>

<p>9. 在表面灑上適量熟糯米粉即可，放在雪櫃內雪凍一至兩小時再食仲好味</p>

<p>汁料A: 椰汁1杯，1/3 杯白糖（好肥<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f631.png" alt="😱" class="wp-smiley" style="height: 1em; max-height: 1em;" />）、1 湯匙鹽、2塊斑蘭葉<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f448-1f3fb.png" alt="👈🏻" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f448-1f3fb.png" alt="👈🏻" class="wp-smiley" style="height: 1em; max-height: 1em;" />此乃曼谷人的口味，也可自行減糖及鹽但不能減太多，否則糯米就沒味了<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
<p>Topping:椰汁1杯，1/4 湯匙鹽，2湯匙粟粉</p>
<p>步驟：</p>

<li>糯米洗淨，以室溫水浸3小時</li>

<li>在小鍋中汁料A煮滾，取走斑蘭葉，放入煮好了的糯米，汁的份量應剛蓋過米，大多會好 sticky,味道應是略甜帶點咸 味，蓋上蓋等10分鐘，略為搞拌再等10分鐘</li>
<li>topping 材料放另一小鍋中，先用匙拌混，再以中細火煮杰即成</li>

<p>材料：花咲蟹一隻（約2斤半）、水仙芒果1/4個，豆角2條、B.B. 菠菜苗6塊、檸檬葉2塊、車厘茄3個、泰式粉絲1/4 包、泰式炒米粉適量、粟米1/4條</p>

<p>調味：魚露少許</p>
<p>步驟：</p>

<li>水仙芒果切粒、豆角洗淨切成約3cm 長，灼2分鐘至8成熟、粉絲浸軟後灼2分鐘</li>
<li>b.b菠菜苗切碎、車厘茄1開4、檸檬葉切幼絲、粟米蒸10分鐘後起出粟米粒</li>
