<p>在街市看到有非常新鮮的薄荷葉，忍不住買來了一大紥。薄荷葉和羊是最好的朋友，在羊架上加上薄荷葉造成的醬汁，不但可以去除羊的腥味，更能添加獨特的香草氣味！</p>



<p>今次的醬汁加了葵花子，吃落去帶有獨特的硬殼果味，口感則是脆脆的！大家如果見到薄荷葉的話不妨買來試試。</p>

<p>材料（一人份）：羊架3支、薄荷葉100 g、葵花子兩茶匙、橄欖油一湯匙、迷迭香適量、海鹽適量、honey mustard 1.5茶匙、糖少許、水少許</p>

<p>步驟</p>



<p>1. 羊架洗乾淨後抹乾，加入少許海鹽，放進煎鍋以中小火每邊煎2-3分鐘（6-7成熟），加入迷迭香葉少許，添加香氣，羊架煎好後需要rest 10分鐘</p>

<p>2. 薄荷葉洗乾淨，抹乾備用</p>



<p>3. 葵花子放氣炸鍋，加入少許油，以200度氣炸6分鐘至金黃色</p>

<p>4. 把葵花子放進pull chopper中，絞碎後再加入一半的薄荷葉及一茶匙的橄欖油，再絞碎，重複以上步驟直至薄荷葉絞碎為止</p>

<p>5. 把已經攪拌好的薄荷葵花籽醬放進鍋中煮熱，加入honey mustard 及水攪拌，再加入少許糖及鹽調味即可</p>



<p>6. 把羊架放在碟上，伴以薄荷葵花籽醬及檸檬汁同吃非常美味</p>

<p>材料：新鮮黑草羊羊腩一斤、鮮竹蔗1支（切開）馬碲8-10粒（對半切開）、冬菇8-10粒、炸支竹一包（今次我用了鮮支竹）、草果1粒、桂皮一塊、果皮一小塊（浸軟去囊）、蔥頭4粒（1開4）、青蔥適量、檸檬葉2-3塊、薑8片、芹菜1棵（我今次沒有加）、生菜一棵（洗淨取葉，可在最後加入羊腩煲的汁煮一會先吃）</p>

<p>羊腩醬：南乳一磚、腐乳2磚、柱侯醬1茶匙、水2杯、冰糖一粒、花雕酒2瓶蓋、蠔油1茶匙</p>

<p>1. 羊腩洗淨後以活跑水（加入3片薑在水中）的方法處理後再洗淨、抺乾備用</p>

<p>2. 在深炒鍋中加入薑片、蔥頭、及竹蔗，略炒香後加入羊腩爆香</p>

<p>3. 沿邊加入花雕酒，再加入羊腩醬</p>



<p>4. 加入冬菇、馬碲、草果、果皮、柱皮，以中火煲滾，再以中小火炆煮1小時</p>

<p>5. 1小時後試味及查看羊腩是否夠林，如兩者均可，即加入竹支竹煮5分鐘，最後加入蔥段、撕碎了的檸檬葉及芹菜再煮1-2分鐘即可</p>
