										<content:encoded><![CDATA[<p>魷魚是在街市中很易找到又平宜的海鮮，之前收到不少朋友的查詢，關於魷魚的烹調方法，說每次煮魷魚都會好硬，不好吃。其實魷魚很容易熟，只要放滾水煮2分鐘左右，煮太耐的話會硬啊！要確保其熟，只要煮2分鐘後讓魷魚待在熱水中5 分鐘就可，那麼魷魚必是全熟又不會過硬。</p>
<p>以紅咖哩煮魷魚，這個組合相當不錯，紅咖哩有魷魚的鮮味，魷魚則變得惹味。另外，很多朋友也有另一疑問，就是紅咖哩面為甚麼那麼多油，會很肥嗎？其實，煮咖哩時我只下了1茶匙的油，而大家看到的，其實是椰汁經長時間醬火煮後所出的椰油啊，並不是肉類所出的油啊，無論是否加肉，只要細火煮的時間夠長，椰油還是會出來的，所做的咖哩就漂亮多了。</p>

<p>材料：魷魚兩隻</p>
<p>咖哩料：南薑2片、椰汁1盒（400ml）、紅咖哩醬1.5湯匙、香茅2枝、莞茜根3-4條、蝦醬少許、檸檬葉3-4塊</p>
<p>調味：魚露2茶匙、椰糖2茶匙</p>

<li>魷魚洗淨，去軟骨和墨囊，保留外皮。魷魚鬚去吸盤</li>

<p>步驟：</p>
<p>雞洗淨及抹乾，以鹽醃一晚</p>
<p>香茅、南薑、莞茜、蒜頭切碎備用</p>
<p>甘筍及紫洋蔥切細件</p>

<p>以繩綁好雞脾</p>
<p>焗爐預熱210度</p>

<p>步驟：</p>
<ol>
<li>一字骨用跑活水方法洗淨，即係約排骨放在室溫水中，煲至滾就熄火、然後用水喉水沖洗乾淨雜質</li>
<li>香草材料先洗淨浸再加入鹽的水中</li>
<li>泰式小矮瓜切半，檢查裏面是否有蟲，然後放在水裏以防止變色</li>
<li>香茅沙薑莞茜腳用刀背拍爛（記住是拍爛不是用刀切開一條條）</li>
<li>檸檬葉去除葉中間版的位置然後撕碎</li>

<p>材料：新鮮牛腩一斤、香茅6枝、南薑2-3片、檸檬葉數片、莞茜根6-7 條、泰式茄子6個</p>
<p>調味：紅咖哩醬約40g，椰汁400ml, 椰糖適量、魚露適量、蝦醬少許</p>
<p>製作步驟：</p>
<ol>
<li>牛腩洗淨後以活跑水方法處理（即放入牛腩於室溫水中，至水煮滾，此舉可幫助去除雜質）後切件</li>
<li>調味料放入調理碗混合好</li>
<li>香茅取根部略拍、檸檬葉洗淨撕碎、莞茜根洗淨後去黃色皮，略拍、南薑切薄片，要2-3片、 泰式茄子切半，檢查清楚裡面是否有蟲，放入加了青檸汁及鹽燒熱滾起的水裡煮熟（此舉可防止茄子變黑）</li>
<li>牛腩置鍋中，加入（2）的調味料，再加入香草材料（現階段不下茄子），以小火煮大約1.5 小時</li>
<li>試味及測試牛腩是否已稔，如不夠咸可加魚露、不夠甜加椰糖。</li>
<li>如牛腩已差不多稔，加入茄子，再煮15-30分鐘即可</li>
<li>煮好後可加一些香草在面，為賣相加加分<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f609.png" alt="😉" class="wp-smiley" style="height: 1em; max-height: 1em;" /></li>
