<p>認識我嘅朋友都知道，我一但下左決心，就要將事情盡力做好！尋日愚人節同老公出去食早餐，佢成日叫我煮粉d外送，用多d時間做youtube，咁就唔駛咁辛苦同埋可以好好分享美食俾大家！</p>

<p>今日有點事做，叫姐姐幫手去街市買餸，佢就買嚟咗兩隻紅花蟹、一啲豬肉同埋一啲芹菜芫荽咁，回家嘅時候就用呢啲材料炮製一道菜色。</p>



<p>加入左泰式魚露添加左鹹香嘅味道好好味！新鮮嘅紅花蟹，蟹味鮮甜！不錯！不錯！</p>

<p>材料：紅花蟹兩隻（大約半斤）、梅頭豬肉$20（切碎）、芹菜莖部（切粒）、芫荽莖部（切粒）、蒜頭兩粒（切粒）、紅蔥頭一粒（切粒）、細泰國粉絲一個（浸軟）</p>



<p>調味：魚露一茶匙、蠔油一茶匙、生抽少許、糖少許，水200 ml、老抽少許</p>



<p>其他：青檸一個、炒米粉適量（可省）</p>

<p>步驟</p>



<p>1. 紅花蟹洗淨，肚向上蒸13分鐘，拆肉後備用，留蟹蓋備用</p>



<p>2. 在炒鍋中加入適量的油，先爆香蒜頭及紅蔥頭，再加入梅頭豬肉炒香至九成熟</p>

<p>3. 加入紅花蟹肉、粉絲及芹菜莖炒勻，加入調味料，蓋上蓋子煮大約8至10分鐘，最後加入芫荽莖部即可</p>

<p>猜不到雪藏蟹鉗還很鮮味，加上泰式粉絲口感彈彈，簡簡單單又一餐！</p>

<p>粉絲醃料： 蠔油1.5湯匙、豉油1湯匙、糖2茶匙、鹽少許、莞茜籽1茶匙、莞茜腳4-5隻、黃薑粉少許、沙薑粉少許、水約30 ml、油2湯匙</p>

<p>2. 浸軟粉絲，加入粉絲醃料、芹菜、洋蔥、蔥、蒜頭及蔥頭拌好醃約30分鐘</p>

<p>材料：海紅花蟹仔四隻、粉絲1/3個、夜香花少許、</p>
<p>粉絲調味：蠔油1茶匙、生抽半湯匙、糖半茶匙、魚露一茶匙、黃薑粉少許、油少許、芹菜少許、蝦米1茶匙、lemon basil 一棵（切碎）、芫茜連根一棵（切碎）、蒜頭一粒（切碎）</p>

										<content:encoded><![CDATA[<p>我家的小孩，對日本的鹽麴特別喜愛。但凡加了鹽麴的菜色都胃口大開。<span style="caret-color: #000000; color: #000000">鹽麴是日本一種傳統調味料，以米和麴菌發酵生成的米麴，加入鹽和水混合再發酵而成。鹽麴含豐富維他命</span><span style="caret-color: #000000; color: #000000">B</span><span style="caret-color: #000000; color: #000000">和乳酸菌，有助調節新陳代謝、腸道健康、防衰老及抗疲勞等。</span>由於鹽麴本身算是有益的調味料，所以我也會常常用它入饌，最常用在醃雞翼，既方便，又好味。</p>
<p>今天買了一些非常靚的肥牛，本想做一個惹味的沙嗲牛肉粉絲煲，但小朋友卻說想要吃鹽麴，好吧，就用它來試做吧，猜不到以鹽麴來做肥牛粉絲煲也十分美味！推介啊<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60f.png" alt="😏" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>在曼谷師傅朋友的spa作客，師傅煮了一度泰式粉絲蟹煲給我吃，蟹肉的清甜與粉醃的味道實在太好，食完一啖又一啖！放在煲底的排骨吸收了蟹汁的精華，美味程度<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f4af.png" alt="💯" class="wp-smiley" style="height: 1em; max-height: 1em;" />！</p>

<p>材料：膏蟹一隻（也可用肉蟹）、泰式粉絲兩束</p>
<p>香草：芫荽頭4-5根、薑片4-5片、芹菜（按喜好）、蔥少許（切段）帶肥排骨8-9 件、蒜頭7-8粒、蔥頭5-6粒</p>
<p>醃粉絲材料：豉油1湯匙、魚露1茶匙、椰糖少許、蠔油1湯匙、暖水1湯匙、黃咖喱粉/黃薑粉少許、香草paste(以6根莞茜根、4粒蔥頭、1茶匙芫茜籽、少許白胡椒盅爛）、油適量</p>
