<p>記得係N年前，仲同老公拍緊拖嘅時候曾經去過雲南嘅麗江，最鍾意係麗江嘅古城，古色古香，當年還在發展中嘅麗江所有人都親切有善。</p>



<p>去一個地方要了解當地嘅文化，當然係要食食食！而我哋最鍾意食嘅係當地嘅甩手巴巴（即係類似泰國嘅香蕉pancake）同埋雲南小鍋米線。</p>



<p>喺冬天嘅時候食一碗暖暖既米線，溫暖嘅感覺至今難忘。小村莊入面嘅餐廳用上新鮮嘅材料：走地雞、池塘鴨燉制而成嘅米線湯底，鮮甜非常！最近收拾屋企嘅時候睇返舊相，突然掛念呢一款嘅味道，出街吃米線充滿味精，未能真正食到正宗雲南米線嘅味道，唯有自己整，真材實料！雖然要下一啲功夫，但係我可以話俾大家聽係值得嘅！</p>

<p>材料：西村象拔蚌一隻、芹菜（切段）少許、蕃茄三個（切件）、薑片兩片、海蝦一斤、莞蕃少許、鹽適量（按喜好）、雞上湯450 mL、清水450 mL</p>



<p>步驟：</p>



<p>1. 燒熱一鍋水，煮熟海蝦後去殼備用</p>

<p>2. 西村象拔蚌以熱水略煮，取出後去皮</p>

<p>3. 去除象拔蚌的膽，把象拔蚌尾部位置切大件</p>



<p>4. 象拔蚌深色的位置切去，把象拔的位置設成薄片</p>



<p>5. 在炒鍋中加入兩片薑及油，燒滾後放進已抹乾的海蝦殼炒香，加入蕃茄再炒香，加入上湯及清水，煮15分鐘</p>

<p>6. 過濾已煮好的湯，加入芹菜、銀芽及米線煮一會</p>

<p>7. 在碗中放入米線，煮好的銀芽，在最上面放上已切片的象拔蚌、芫荽及芹菜葉，淋上熱湯即成</p>
