<p>之前整咗好多四寶咖喱醬，忙碌嘅時候攞出嚟就最啱啦！喺街市買來一斤牛腩、幾個薯仔，加埋黃咖喱醬炆下焗下，晚餐就搞掂！</p>

<p class="p1">今日姐姐突然間要放假去送機，於是乎我就做咗一日全職媽媽<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" />朝頭早起身煮早餐俾小朋友，然後忙着ball and chain 既新貨發佈，幫大家訂咗一大輪袋之後，就準備午餐，再送去學校俾小朋友<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60d.png" alt="😍" class="wp-smiley" style="height: 1em; max-height: 1em;" />然後去買餸準備今晚嘅晚餐。</p>



<p class="p1">已經計劃好晒，今晚要食乜嘢，買咗牛坑腩、薯仔、雞翼同埋黃咖喱醬，跟住返屋企準備煮嘢食！</p>



<p class="p1">點知，整整吓嘅時候發現開唔到支黃咖喱醬<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f605.png" alt="😅" class="wp-smiley" style="height: 1em; max-height: 1em;" />真係用咗15分鐘都開唔到，仲要用盡晒所有方法：橡筋、廚房手套、浸熱水、保鮮紙……當開到好氣餒嘅時候，喺WhatsApp魔鬼群組講兩句，點知有朋友仔同我講可以試吓用刀仔撬，神奇嘅事發生，一撬撬開咗，群組朋友仔咖喱有啲辦法！就係靠佢開到之王咖喱醬，今晚有咖喱食<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f602.png" alt="😂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p class="p1">本身開唔到支黃咖喱醬，加咗啲柱侯醬落去牛腩度，原來加埋黃咖喱醬一齊煮好好味喎！</p>

<p><strong>很多朋友都喜歡吃咖喱，但又不能吃太辣。他們同樣喜歡咖喱的香味，但又接受不了咖喱太辣。</strong></p>



<p>今天路過常常幫襯的竹蔗店，本是打算買竹蔗茅根煲竹蔗茅根特飲，突然靈機一觸，不如把竹蔗及馬蹄加入黃咖喱增加甜味吧！但過辣的問題還沒有解決，於是又再想，如果除了加入椰奶也加入淡奶的話，效果又會如何呢？</p>



<p>越諗越想知結果，馬上買來牛筋腩試試。加了淡奶的黃咖喱牛筋腩，多了一份淡淡的奶香，竹蔗也為黃咖喱加了一份甜味，辣度中和了，美味依然！大家可以試一試呢！</p>

<p>材料：牛筋腩一磅、馬蹄四粒（略拍）、椰汁400ml、淡奶（大）一罐、黃咖喱醬1.5湯匙</p>



<p>香草材料：紅蔥頭兩粒、竹蔗一支（切片）、香茅3枝、園西根四至五根（略拍）、蒜頭三至四粒</p>



<p>調味料：椰糖兩至三茶匙、魚露適量</p>



<p>裝飾：莞茜及檸檬葉適量</p>

<p>1. 牛筋腩以跑活水的方式處理後切大件</p>

<p>2. 在鍋中加入兩湯匙的油，先爆香香草材料</p>

<p>4. 逐少加入椰汁至椰汁溢出椰油，加入淡奶及馬蹄</p>

<p>今天突然很掛念柱侯醬的味道，特地去了荃灣兆記肥牛買牛坑腩來煮。家中的九龍醬園柱侯醬已經用完，到九龍城找也說暫時缺貨<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f648.png" alt="🙈" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f648.png" alt="🙈" class="wp-smiley" style="height: 1em; max-height: 1em;" />，唯有使用店員推介的第二個牌子，當然還是九龍醬園的比較好吃啦。</p>



<p>這道牛坑腩加了新鮮竹蔗及羅漢果，不但使牛坑腩容易林，也增加了一點點的甜味，味道不錯喔！</p>

										<content:encoded><![CDATA[<p>冬天到了一定要食牛腩煲，牛腩煲的精髓不在牛腩，而在腩汁！用腩汁來撈飯，可以吃下2碗飯；用腩汁來撈麵，味道更捧！我最喜歡吃炆得稔滑的牛腩，入口即融，肉呈一絲絲的，非常好吃！</p>

<p>材料：牛坑腩一斤、日本大根1條</p>
<p>汁料：生抽200ml、味醂50ml、紹興酒20ml、糖2湯匙、八角2-3粒、花椒少許、桂皮一塊、水500ml</p>
<p>其他： 雞湯約200ml</p>
<p>步驟：</p>

<p>2. 桂皮、八角及花椒洗淨，放進煲湯袋</p>

<p>4. 放進真空煲，煮6-8小時</p>

<p>材料：新鮮牛腩一斤、香茅6枝、南薑2-3片、檸檬葉數片、莞茜根6-7 條、泰式茄子6個</p>
<p>調味：紅咖哩醬約40g，椰汁400ml, 椰糖適量、魚露適量、蝦醬少許</p>
<p>製作步驟：</p>
<ol>
<li>牛腩洗淨後以活跑水方法處理（即放入牛腩於室溫水中，至水煮滾，此舉可幫助去除雜質）後切件</li>
<li>調味料放入調理碗混合好</li>
<li>香茅取根部略拍、檸檬葉洗淨撕碎、莞茜根洗淨後去黃色皮，略拍、南薑切薄片，要2-3片、 泰式茄子切半，檢查清楚裡面是否有蟲，放入加了青檸汁及鹽燒熱滾起的水裡煮熟（此舉可防止茄子變黑）</li>
<li>牛腩置鍋中，加入（2）的調味料，再加入香草材料（現階段不下茄子），以小火煮大約1.5 小時</li>
<li>試味及測試牛腩是否已稔，如不夠咸可加魚露、不夠甜加椰糖。</li>
<li>如牛腩已差不多稔，加入茄子，再煮15-30分鐘即可</li>
<li>煮好後可加一些香草在面，為賣相加加分<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f609.png" alt="😉" class="wp-smiley" style="height: 1em; max-height: 1em;" /></li>
