<p>細細個同屋企人返鄉下旅行，最鍾意去一間餐廳度食飯，冇豪華嘅裝修，仲要冇冷氣添！但係每一次都會去嗰度食飯，原因係為咗鑊氣十足嘅三杯雞。餐廳用上新鮮走地雞，再加上用生鐵鑊，香噴噴好好味！</p>



<p>今日心血來潮想食，但又想搞搞新意思，加埋金不換葉落去炒夠好食啦掛！今日知道知道自己收好夜，就叫姐姐去街市買定新鮮雞，返屋企醃一陣，炒兩下就搞掂！確實係方便又好味。</p>

<p>細個小學放學嘅時候，有陣時媽咪會叫我買啲嘢返去煮午餐。那時候對所有材料都好好奇！記得有一次買咗銀針粉返屋企，但又唔知道應該點樣煮。就靈機一觸，打算用乾炒牛河嘅方法去煮。細細個唔識切牛肉，順紋切，仲搞到好硬添！後尾爸爸教，要逆紋切，自此之後整銀針粉嘅牛肉就好味好多啦！</p>

<p>材料：銀針粉一斤、菜心少許（切段）、銀芽$3、牛肉$30、洋蔥¼個（切絲）、蔥段適量、蔥頭4粒（拍扁）</p>



<p>調味料：蠔油2茶匙、生抽2茶匙、糖少許、老抽1/4茶匙、魚露少許</p>



<p>牛肉醃料：生抽一茶匙、老抽1/3茶匙、糖少許、水一茶匙、麻油少許</p>

<p>步驟：</p>



<p>1. 牛肉逆紋切薄片，用牛肉醃料醃15分鐘</p>



<p>2. 銀針粉洗淨後滴乾水備用</p>



<p>3. 在炒鍋中加入油、兩粒蒜頭、一半洋蔥絲、少許蔥白，加入牛肉炒至九成熟後盛起備用</p>

<p>4. 在同一炒鍋中加入另外兩粒蒜頭、一半洋蔥絲、少許蔥白爆香後加入菜心，炒一會兒至八成熟，加入銀芽略炒</p>

<p>昨天在西貢買來兩隻紅花蟹，女兒說想吃上湯炒花蟹，今次是用了一個半煎炸的方法來做，加了花雕酒，帶點淡淡的酒香，只用了少許調味，就帶出了海蟹的鮮味。加上不需要油炸，比較簡單，大家可以考慮用呢個方法製作花蟹呀！</p>

<p>1. 海蟹洗乾淨，切件，沾上少許生粉備用</p>

<p>2. 在炒鍋中加入兩湯匙的油，爆香紅蔥頭、薑片、洋蔥件及蔥白，放在鍋的一邊後加入紅花蟹件爆香至8成熟</p>

<p>3.加入花雕酒，蓋上蓋子大約1分鐘，再加入上湯材料（生粉水除外），蓋上蓋子煮3-4分鐘</p>

<p>去曼谷旅行的時候，最喜歡就是吃炒肥河粉。質地滑滑的，有一點入口即溶的感覺。在曼谷實在非常容易吃到肥河粉，無論是在酒店、餐廳或是夜市，就好像白米一樣，隨時也可以吃到。</p>



<p>但是，想在香港吃肥河粉的話卻不怎麼容易，除了在泰式餐廳以外，很多泰國舖頭都沒有賣肥河粉。</p>



<p>昨天在九龍城城南道居然給我買到肥河粉。店主說肥河粉不是常常有貨，要吃的話最好打電話先訂。既然買到，晚上就整一道泰式炒河粉吧。</p>



<p>泰式炒河粉沒有特定的配料，也非常易做，昨天老公不在家吃飯，就用15分鐘快快脆脆炒咗啲河粉出來，我愛吃、小朋友愛吃，大家都食得好開心。</p>

<p>材料：泰式肥河粉半斤、雞髀起肉2隻、鮮蝦六至八隻、泰國椰菜苗適量、甘筍數片、泰國肥芽菜1/3包、蒜頭三粒（拍扁）、紅蔥頭三粒（切片）、蔥段適量（我今次冇落）</p>



<p>汁料：蠔油1.5湯匙、生抽一至兩湯匙、老抽少許、魚露一茶匙、椰糖少許、水兩至三湯匙</p>



<p>其他：炒米粉、辣椒粉</p>

<p>2. 雞髀起肉後切片，以少許鹽醃15分鐘</p>



<p>3. 鮮蝦以滾水煲熟，去殼備用</p>



<p>4. 甘筍切薄片、蒜頭及紅蔥頭也準備好</p>



<p>5. 在炒鍋中加一湯匙的油，爆香蒜頭及紅蔥頭及蔥白</p>

<p>6. 加入雞肉炒香至9成熟後放入椰菜苗、甘筍及一半肥芽菜略炒</p>

<p>7.再放入肥河粉炒勻，加入汁料拌勻，放入剩餘的肥芽菜再炒勻就可以了</p>

										<content:encoded><![CDATA[<p>不喜歡喝酒的我但卻愛玫瑰露酒的香味。還記得在小時候，一到冬天，阿媽就會在雞檔買來一份份雞生腸及雞蛋仔，再用糯米酒及玫瑰露酒來煮。酒香滿屋，味道甜甜，吃完全身暖暖，這就是童年的回憶、童年的味道。</p>
<p>可是，我家的小孩還小，喝雞酒好像還不是時侯，愛玫瑰露酒的我則會在煮食時加一點點，去增加食物的香氣！</p>

<p>材料：鮮雞半隻（洗淨後斬件）、蔥段適量、香茅（只要根部，切片）、蒜頭3-4粒（拍扁）、指天椒一隻（切片）（可省）、金不換4-5棵、鹽一茶匙</p>

<p>調味： 生抽2湯匙、玫瑰露酒1-2樽蓋、蠔油1茶匙、魚露少許、糖約2茶匙、水少許</p>

<p>3. 加入雞件炒香至9成熟</p>

										<content:encoded><![CDATA[<p>去泰國芭提雅大排擋，遊人們必點的菜色，應該是飛天通菜吧！點這道菜色，除了因爲鑊氣足，也因為想看通菜飛天。師傅把通菜用大火炒香後拋起，然後由對面馬路的waiter 無誤地接住，非常準確，使人嘆為觀止！</p>

										<content:encoded><![CDATA[<p>下雨天的時候，人懶懶的，提不起勁來！就要吃一些甜甜酸酸的菜式刺激一下味蕾，cheer up一下自已。我家的成員最愛吃雞翼，本想做一道黑醋雞翼，但今天居然早了回家，有時間給我替雞翼起骨，好吧，就為家中的各位服務啦！雞中翼起骨後即成雞球，肉嫩又啖啖肉，加上香濃的黑醋汁，很下飯呢！</p>

<p>汁料：意大利黑醋2湯匙、黑糖2湯匙、鹽少許、生抽2茶匙、生粉水少許</p>
<p>步驟：</p>

<li>雞中翼洗淨後起骨，以少許鹽醃30分鐘備用</li>
<li>洋蔥及西椒洗淨切塊、蒜頭切片</li>

<li>如沒有氣炸鍋則可放在滾油中炸熟</li>

										<content:encoded><![CDATA[<p>一隻大墨魚真的可以食幾日，日日都白灼都好悶，所以要搞搞新意思。香港有馳名的避風塘炒蟹，既香口，又能帶出海鮮的鮮味。今日搞搞新意思，用避風塘香口的炒法加上泰菜經常用的香草，看看效果如何。</p>

<p>《泰式金銀蒜香料炒墨魚》</p>
<p>材料：墨魚翼（也可用墨魚其他部位）、蒜頭一整個、香茅2枝、南薑2片、檸檬葉3-4片、意大利莞茜少許、指天椒（不喜歡辣就可省）、新鮮青胡椒、紅蔥頭2粒</p>

<p>步驟：</p>

<li>墨魚翼洗淨、抹乾、切片及切格子紋（如喜歡墨魚在煮後卷起，可略為汆水，今次我懶係汆水)</li>

<li>香茅斜切片、南薑切條、檸檬葉及意大利莞茜洗淨撕碎、指天椒切片（如有）、紅蔥頭切片、青胡椒洗淨</li>

<p>材料：蝦米1湯匙、乾魷魚（細隻）2隻、乾冬菇3隻、泰式粉絲2包、蒜頭2粒、蔥段少許</p>
<p>汁料：蠔油1.5 湯匙、豉油1湯匙、水1湯匙、糖少許<img loading="lazy" decoding="async" src="http://daphnema.kitchen/wp-content/uploads/2018/10/img_0666.jpg" class="wp-image-847 size-full" width="3279" height="2921"></p>
<p>步驟：</p>
<ol>
<li>乾魷魚洗淨（不用浸），去軟骨及切絲</li>
<li>乾冬菇浸軟，以粟粉洗淨，切絲</li>
<li>蝦米洗淨後抹乾</li>
<li>蒜頭及乾蔥頭切細粒</li>
<li>泰式粉絲浸軟後用剪刀略剪</li>
<li>在炒鍋中加入炒許油，爆香蒜粒、蔥白及後，放入海味爆香<img loading="lazy" decoding="async" src="http://daphnema.kitchen/wp-content/uploads/2018/10/img_0162.jpg" class="wp-image-846 size-full" width="3024" height="4032"></li>
<li>加入粉絲略炒（如不夠油可加一點）至焦黃後拌入汁料略煮即成！</li>
