										<content:encoded><![CDATA[<p>去日本旅行，最愛是到魚市場食最新解的刺身：拖羅、海膽、金目鯛&#8230;&#8230;應有盡有，大飽口福。在香港，偶爾也會想吃海膽，通常也會在一些大型連鎖超市買，因比較衛生。但都是細細盒，難以盡興。</p>
<p>今次在幫襯開的魚檔訂了北海道海膽，一盒250g<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60d.png" alt="😍" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60d.png" alt="😍" class="wp-smiley" style="height: 1em; max-height: 1em;" />,可以食餐飽！海膽生吃味道甜甜，入口即溶，當然好食！但我家，除了我吃刺身外，其他人只吃熟食<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f605.png" alt="😅" class="wp-smiley" style="height: 1em; max-height: 1em;" />於是一半海膽就用作炒飯。炒香後的海膽，不再入口即溶卻香味滿瀉。一同吃，無論是口感還是味道，都是一流的享受呢<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60d.png" alt="😍" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>調味：鹽少許、日本豉油少許</p>
<p>步驟：</p>
<ol>
<li>先煲飯，如用新鮮煲好的飯，米水要比平時下得少一些，煲好後開蓋冷卻一會兒</li>
<li>在碗中拌混兩隻雞蛋，加入適量鹽拌混</li>

<p>花蟹2隻、青瓜1條、蕃茄1個、雞蛋3隻、青豆角少許、洋蔥1/4個，蒜頭2粒、蔥數條、白飯4碗</p>
<p>炒飯汁料：羅望子汁2湯匙、魚露1湯匙、豉油少許、糖少許、鹽少許</p>

<p>步驟：</p>

<li>花蟹洗淨，蒸12分鐘至熟及後拆肉</li>
</ol>

<li>青瓜及蕃茄切片、蒜頭、洋蔥、蔥（深綠色部份）及青豆角切粒</li>
</ol>

<li>炒飯汁料拌混</li>

<li>在同一個鍋中加入青豆，炒香後盛起，再放入蒜粒及洋蔥粒炒香</li>

<li>在碟邊放好青瓜及蕃茄片，再放入炒飯</li>

<li>在鍋中煎蛋至脆，放在炒飯上，加入青豆及蟹肉即成</li>
