<p class="p1">自從上次阿女食完黑松露薯條之後，就好鍾意食黑松露！尋日經過超級市場咁啱遇到減價，就買定幾支黑松露返屋企煮啦，我成日覺得整意粉係最方便嘅！一碟過懶懶地又好味<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f606.png" alt="😆" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p class="p1">黑松露帶子意粉並不難整，喺屋企食真材實料，大家一齊睇吓點樣整。</p>

<p>還記得第一次食西班牙紅蝦意粉是在ritz Carlton 的一所餐廳，當時食完後一試難忘，覺得非常美味，於是一直都想自己整！今日係情人節，當然要整啲特別嘅嘢食啦，就係新年前訂定西班牙紅蝦，準備今日整餐好味嘅午餐<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60d.png" alt="😍" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p>西班牙紅蝦有好特別嘅味道，佢比其他海蝦嘅味道更濃一點，亦帶一啲腥味，所以處理佢嘅時候諗咗一啲方法去減輕佢嘅腥味，特顯蝦味，或者做法同出邊高級餐廳有啲唔一樣，但係我覺得用薑汁去balance 腥味，係一個唔錯嘅嘗試，大家都可以試吓做<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60a.png" alt="😊" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>出街食飯唔同餐廳嘅肉醬意粉有唔同嘅味道，其實我之前都整過肉醬意粉，但係小朋友話硬係爭少少嘢咁樣，搞吓搞吓，變咗琴日嗰個改良版肉醬意粉，今次佢哋都覺得好滿意！多咗蔬菜、多咗調味料！味道當然立體d啦！</p>

<p>講到新鮮墨魚，好多人都只會食墨魚肉同埋墨魚鬚，其實墨魚內臟嘅墨囊含有勁黑既墨汁，墨汁營養價值高，富含了無機鹽、維生素及鈣等營養，所以如果大家如果買新鮮大墨魚既話，記得留返墨囊整意粉！</p>

<p>到餐廳吃飯時很喜歡吃墨魚汁意粉，墨魚汁的鮮味非其他的海鮮可以比較，但係喺餐廳食墨魚意粉食完之後嘴唇變得黑黑的，有點尷尬<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f606.png" alt="😆" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p>喺屋企煮，如果買到新鮮嘅墨魚，用墨魚汁來做意粉，非常美味！就算買不到，也可以用現成的墨魚汁來做意粉，方便快捷，味道也不錯。</p>



<p>上次的墨魚汁意粉是用新鮮墨魚汁做的，但由於過程太論盡，所以沒有拍照，下次再買到新鮮墨魚的時候再話俾大家知點樣整！</p>



<p>下面嘅食譜就用着方便嘅墨魚汁先。墨魚汁可以喺CC super 買，或者Muji買，個人比較喜歡CC super的，帶鮮味多一點，但因為有蕃茄的成份，所以有少少酸，要自行加糖及鹽調校味道。</p>

<p>香草材料：<br />甘筍一支（切粒後約200 g)、西芹兩支（切粒後約200 g)、洋蔥半個、蕃茄兩個（切粒）、香葉兩至三片、百里香四至五枝（取葉用）、車厘茄8至10粒（對半切開）</p>



<p>肉類材料： 牛肉10兩</p>



<p>醬汁材料：紅酒400 mL、水200 mL、茄膏一湯匙</p>



<p>其他：意粉500g、橄欖油兩湯匙、鹽、糖、及黑胡椒少許、蒜頭三粒</p>

<p>牛肉洗乾淨抹乾，剁碎備用</p>



<p>在炒鍋中加入兩湯匙的橄欖油，先加入洋蔥爆香至微黃，再加入甘筍及西芹炒香</p>

<p><br>5.加入一湯匙茄膏炒香後注入紅酒、百里香、香葉及蕃茄粒先以中火煮5分鐘，再加入200ml 水煮20分鐘，加入少許黑胡椒、鹽及糖調味即成肉醬汁材料</p>
