<p class="p1">唔知做乜事，呢排香港買唔到好食嗰隻蝦頭醬，與其求其買一個牌子，不如自己試吓整！買來一斤大頭蝦，剪咗個蝦頭攞啲蝦膏出嚟，再加埋少少蝦米同埋一啲香草，半個鐘頭就可以整到惹味同埋新鮮好味嘅蝦頭醬！可以用嚟整泰式炒雜菜<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f970.png" alt="🥰" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>打拋其實係咩嚟呢？佢就係泰國嘅其中一款basil，英文名是holy basil，泰文名是甲拋，打拋豬肉其實就係holy basil 炒豬肉。泰國人鍾意用嚟配飯，加埋荷包蛋簡簡單單又一餐！而香港人呢，就用嚟整生菜包，一樣咁好食！</p>

<p>泰國叫做金不換、越南台灣叫做九層塔，呢款香草確實係好香嘅！無論用嚟炒花甲、放落去咖喱或者用嚟炒雞都可以提升香氣。今日就用佢嚟做三杯雞！</p>



<p>加咗勁多香料嘅金不換三杯雞香氣撲鼻、食落去少少香嘅味道，香草嘅味道同埋濃郁嘅泰式風味。今次加多咗麻油落去煮，比起之前嘅味道更加香，係邪惡少少，間唔中食邪惡少少OK啦<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f60c.png" alt="😌" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>上次去清邁學藝之後，一直都想試吓喺屋企自己整椰漿，然後製作紅咖喱，但忙住玩同埋做嘢嘅我，上個禮拜一直都冇時間，琴日喺日本返嚟之後，今朝一早起身馬上行動！</p>



<p>用新鮮椰漿做嘅紅咖喱，比起用盒裝做出嚟嘅紅咖喱更易煮出靚靚嘅椰油、椰味更加香濃，如果買唔到椰漿，但係屋企有攪拌機，不妨試一試，而且一個椰子，椰汁可以用嚟整雞湯、椰子肉可以用嚟整椰漿同埋椰絲，一個多用$35買一個返嚟玩吓，超級抵<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f603.png" alt="😃" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p>另外，俾少少冷知識大家，喺超級市場或者泰國買到一盒盒嗰啲，我哋全部當佢係椰漿，質地比較杰，用嚟煮泰菜嘅時候比較容易煮出椰油，但係就比較肥同埋膩。咖喱嘅時候其實係要加一啲椰奶，椰奶就係椰漿加水，如果買盒裝嘅椰漿就需要加水，水嘅份量係一比一，椰奶可以令到咖喱帶有椰香味但係冇咁膩，自家製製作嘅話就睇吓食譜啦！</p>

<p>上星期到清邁旅行，除咗旅行之外其實都係去學師！今次又去咗上次Miss屋企嗰度整嘢食，朋友們想學豬肉串燒，我心諗：「豬肉串燒我自己都整過好多次，既然朋友想學就睇吓Miss點樣整啦！」，各處鄉村各處麗，泰北嘅豬肉串燒同曼谷嘅串燒有啲唔一樣，無論係醃料、煮法、醬汁都有啲唔同，今次加咗自己嘅一啲心得落去泰北呢個豬肉串燒嗰，實行一個曼谷泰北fusion！整出嚟嘅豬肉串燒又香又Juicy，醬汁材料亦都簡化咗唔少！大家快啲睇吓點樣整啦！</p>
