<p>今天去海鮮檔買海鮮的時候，老闆娘游說我：「今日啲蟶子好靚喎，買番啲返去整嚟食下！」我心諗：「成日整蟶子，食嚟食去都係幾款食法，不如今日整個新嘅食法啦！」</p>



<p>回家後睇一睇有乜嘢材料，我覺得涼拌聖子加爆香左嘅乾蔥頭、沙薑同埋蔥應該幾香口！再加埋自製嘅醬汁，帶少少酸味降暑不錯！</p>

<p>材料：蟶子一斤</p>



<p>涼拌醬汁材料：生油一湯匙、紅蔥頭一粒（切碎）、沙薑一小塊（切碎）、兩條（切成條狀放在凍水中）</p>



<p>涼拌醬汁調味料：柚子醋一茶匙、日本豉油一湯匙、糖少許、味醂一茶匙、日本清酒一茶匙、麻油少許</p>

<p>步驟</p>



<p>1. 蟶子請海鮮檔代劏後，回家清洗內臟後放滾水煮1分鐘，取出用食用水洗淨，放涼後放雪櫃最少兩小時至涼</p>



<p>2. 在小鍋中加入生油，爆香紅蔥頭、沙薑及一半青蔥，加入涼拌醬汁調味料，煮一會兒，加入麻油，試味至合適</p>

<p>3. 把醬汁的青蔥取出，放涼醬汁後，在雪櫃取出蟶子，加入餘下的半分青蔥再加入醬汁拌勻即可食用</p>

<p>今天在街市買來非常新鮮的紐西蘭蟶子皇，之前處理聖子一般都是以中式方法-豉椒蒜蓉炒或者泰式方法-金不換炒蟶子。今天客人想order椰汁煮，又願意做白老鼠，所以就試下做啦！差不到蟶子皇的鮮甜味與椰汁非常夾，加了香草的椰汁，多了一份清香的味道，最後加入青檸汁，甜甜酸酸的很好吃！</p>

<p>材料：蟶子皇一斤、椰汁三杯、莞茜根6條、南薑3片、香茅四支、蒜頭四粒、檸檬葉4塊</p>

<p>調味料：砂糖少許，魚露1湯匙、莞茜適量</p>



<p>步驟：</p>



<p>蟶子劏好洗淨，把蟶子所有的沙都清除，只留下白色肉的位置，放入滾水中焯20秒後取出肉，洗乾淨備用</p>



<p>在鍋中爆香蒜頭、南薑及香茅</p>

										<content:encoded><![CDATA[<p>很多朋友問我，為甚麼喜歡吃泰菜？其實中菜及泰菜我同等喜愛！愛做泰菜，因為喜歡用新鮮的香料，那種鮮香及獨特的味道，是其他樽裝調味料不能取代的啊！要選最喜愛的，一定是金不換，喜歡它濃濃的香草香味！</p>
<p>至於泰式醬料，要說喜愛的，第一是魚露，其次就是泰式辣醬。泰式辣醬，其實並不辣，是帶點微辣但濃濃的花生香味，甜甜的，與海鮮類非常夾。</p>

<li>放蟶子入滾水一會，方便脫殼</li>
