<p>估唔到咁多人鍾意食燒賣，尋日諗住求其post啊，點知大家好有反應喎！於是今日就快快脆脆寫咗呢個食譜俾大家先！</p>



<p>燒賣其實唔難做，係墨魚膠比較難搞，如果大家真係冇時間，其實可以買現成嘅墨魚膠試吓整嘅，當然味道就冇咁好味啦！</p>

<p>到酒樓飲茶，家中的各位都很喜歡吃燒賣。唯獨是我不大喜歡吃酒樓的燒賣，因為酒樓的燒賣多帶肥肉，味道亦較濃。早前見到朋友的食譜教其他人做燒賣，一直都想試試自己做。但到了很多地方都找不到燒賣皮，於是放棄了這個念頭。</p>
<p>昨天路經荃灣，在一間賣粉麵的鋪頭，看了一直想買的燒賣皮。立即就買了，決心製作燒賣作為家中小皇帝們的下午茶。</p>
<p>在荃灣買的燒賣皮蒸煮後非常透薄，餡料則用上街市買的新鮮黑毛豬和冰箱裡的墨魚膠及蝦膠，這款蝦膠味道鮮美，還有大大粒蝦肉、墨魚膠口感也不錯，但略帶咸。</p>
<p>另外，用了在朋友介紹菇場買的大冬菇。由於墨魚膠是黑色的所以做出來的燒賣比較特別。加上了新鮮的蟹籽，口感脆脆，食這個做下午茶，大滿足呢<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/263a.png" alt="☺" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>材料：梅頭豬肉$30、墨魚膠150克、蝦膠150克、冬菇2隻（我的冬菇很大，所以自行調節啦）、燒賣皮50塊、多籽少許</p>
<p>調味（蝦膠）：糖1茶匙、麻油少許、蝦粉少許、胡椒粉少許、豆粉半茶匙</p>
