<p>還記得好細個去參加親戚嘅飲宴，屋企人都會早少少去酒樓打麻雀，小朋友嘅我當然唔會打麻雀，就同其他小朋友玩，玩到有啲肚餓，大人就會話：「不如叫上湯蟹肉伊麵啦！」，每次聽到佢哋咁樣叫，心裏面都暗起，因為細細個已經好鍾意食蟹肉<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f92d.png" alt="🤭" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f92d.png" alt="🤭" class="wp-smiley" style="height: 1em; max-height: 1em;" />呢樣嘢似乎係去飲宴先食得到嘅，所以當蟹肉伊麵，一嚟到就會好安靜係咁食<img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f923.png" alt="🤣" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p>長大後去朋友嘅婚宴，發現好似已經冇咗上湯蟹肉伊麵啦，已經好耐冇食過！前兩日買咗新鮮嘅松葉蟹，食晒啲蟹腳仲有蟹身未食，就重拾返以前嘅味道啦，上湯蟹肉伊麵，自己整可以用上鮮制嘅雞湯同埋靚靚嘅蟹，鮮味非常！</p>

<p>昨天在西貢買來兩隻紅花蟹，女兒說想吃上湯炒花蟹，今次是用了一個半煎炸的方法來做，加了花雕酒，帶點淡淡的酒香，只用了少許調味，就帶出了海蟹的鮮味。加上不需要油炸，比較簡單，大家可以考慮用呢個方法製作花蟹呀！</p>

<p>材料：紅花蟹兩隻、蔥段適量、薑片四片、紅蔥頭三粒（一開四）、洋蔥半個（切件）、生粉適量</p>

<p>上湯材料：雞湯200 ml、生抽一湯匙、蠔油一湯匙、糖少許、生份水適量</p>



<p>其他：油兩湯匙、花雕酒一瓶蓋</p>



<p>步驟</p>



<p>1. 海蟹洗乾淨，切件，沾上少許生粉備用</p>

<p>2. 在炒鍋中加入兩湯匙的油，爆香紅蔥頭、薑片、洋蔥件及蔥白，放在鍋的一邊後加入紅花蟹件爆香至8成熟</p>

<p>3.加入花雕酒，蓋上蓋子大約1分鐘，再加入上湯材料（生粉水除外），蓋上蓋子煮3-4分鐘</p>

										<content:encoded><![CDATA[<p>中學二年級開始，有客人到訪家中的時候，爸爸都會叫我為客人準備一道美食，通常會做炸子雞或是上湯龍蝦。這兩道菜式，大大話話做了多過50次！雖然常常都做，但是還10分愛吃。</p>
<p>前幾天過冬，當然也要為家人做一道上湯龍蝦啦！是次用上非常新鮮的澳洲龍蝦。肉質彈彈的，也十分鮮味！喜歡青蔥味的我，添加了很多很多蔥，煮出來的上湯龍蝦非常香呀！</p>
<p>大家也趁着聖誕假期，為家人朋友做一個上湯龍蝦啦！</p>

<p>材料：新鮮龍蝦兩隻（約1斤）、伊麵兩個、蔥$10（切段）、薑3-4塊、雞湯250ml(我用鮮雞殼淆湯，也可用盒裝雞湯）、紹興酒少許</p>

<p>步驟：</p>
<p>1.龍蝦放冰格大約40分鐘，把其雪暈</p>

<p>3. 輕輕洗淨</p>

<p>5. 伊麵略略熱水沖乾淨，放在滾水中煮軟，約2分鐘，取出後以食用水沖洗備用</p>
